Passionfruit White Chocolate Muffins Recipes
PASSIONFRUIT & WHITE CHOCOLATE MUFFINS
With or without the icing, these taste great! This recipe comes from Super Food Ideas magazine. Makes 12 muffins.

Steps:
- Preheat oven to 200°C Lightly grease a 12-hole 1/3-cup capacity muffin pan.
- Combine flour, sugar and chocolate in a bowl. Make a well in the centre.
- Whisk butter, milk, egg, passionfruit and vanilla in a jug and pour into well. Gently fold until just combined.
- Three-quarter fill muffin holes with mixture. Bake for 15 to 20 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes. Turn onto a wire rack.
- Passionfruit icing:
- Stir icing sugar, water and passionfruit in a bowl until smooth. Spoon over muffins, allowing to drizzle down sides. Allow to set. Serve.

- To make icing: Stir all ingredients together until smooth.
- To make muffins:.
- Preheat oven to 200 Degrees Celsius Grease 12 capacity muffin tray.
- Combine flour, sugar and chocolate in a bowl.
- Make well in centre and whisk butter, milk, eggs, passionfruit and vanilla and add to dry ingredients.
- Mix until just combined and pour into tray.
- Bake 15 - 20 minutes.
- Cool and pour icing over.

- 2 In a separate mixing bowl or jug, whisk together the milk, yoghurt, melted spread, passionfruit and egg.
- 3 Pour the wet mixture into the well of the flour mixture, then add the white chocolate chips and gently stir until everything is just combined.
- 4 Spoon the mixture into the cases, then bake for 20 min or until a skewer pushed into the middle of the muffins comes out clean. Transfer to a wire rack to cool, then dust with a little icing sugar.
