CREAMY GARLIC PARMESAN ORZO

Creamy Garlic Parmesan Orzo image

This Creamy Garlic Parmesan Orzo can be on your table in 15 minutes! While it's perfect as a side dish, I prefer this as a meal on its own because it's cheesy, creamy and really hits the spot.

Categories     Main Course     Side Dish

Time 15m

Number Of Ingredients 11

2 tablespoon olive oil
4 tablespoon butter (unsalted)
1 small onion (chopped)
4 cloves garlic (minced)
2 cups orzo (dry)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
2 cups chicken broth (low sodium)
2 cups half and half
1 1/2 cup Parmesan cheese (freshly grated)
2 tablespoon fresh parsley (chopped)

Steps:

  • In a large skillet add the olive oil, butter and cook for about 30 seconds until the butter melts. Stir in the onion and garlic and let it cook for about 2 minutes until the onion softens and the garlic becomes aromatic.
  • Add the orzo to the skillet and let it cook for about 2 minutes just in the oil so that it starts to toast lightly, this will give it a nutty flavor.
  • Season with salt and pepper then stir in the chicken broth and half and half. Bring to a boil, then turn the heat down to a medium-low, cover with a lid and let it cook for 5 minutes.
  • Remove the lid and stir in the Parmesan cheese and fresh parsley.
  • Serve immediately.

Time 20m

Number Of Ingredients 10

2 tablespoons olive oil
1-1/2 cups uncooked orzo pasta
1 12-ounce bag Bird's Eye® Recipe Ready Primavera Blend frozen vegetables
3 cloves garlic (minced)
1/2 cup white wine (could use additional broth instead)
2-1/2 cups chicken (or vegetable broth (I use reduced sodium))
1-1/2 teaspoons Italian Seasoning
2 teaspoons dried parsley
Salt and pepper to taste
1/2 cup freshly grated parmesan cheese

Steps:

  • In a large, deep heavy skillet, heat the oil over medium heat. Stir in the orzo and cook for about 3 - 4 minutes until the orzo is lightly browned.
  • Stir in the frozen vegetables and stir frequently for about 5 minutes until the vegetables are softened.
  • Add the garlic and stir constantly for about 1 minute so it does not burn.
  • Pour in the white wine and stir for about a minute. Then pour in the chicken broth and stir.
  • Stir in the italian seasoning, parsley, salt and pepper. Let simmer for about 10 - 15 minutes or until liquid is absorbed and the orzo is soft.
  • Remove from heat and stir in freshly grated parmesan. Serve warm.

LEMON ORZO PRIMAVERA

Colorful vegetables and the flavors of lemon and thyme make this orzo dish great for picnics. You can chop the zucchini and carrot instead of grating them to cut down on prep time, just be sure to cook them for a few minutes longer before adding the orzo.
