10 fresh asparagus spears, trimmed
cooking spray
1 tablespoon grated Parmesan cheese
⅛ teaspoon garlic salt

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Grease a baking sheet with cooking spray.
  • Lightly coat asparagus with cooking spray; place on prepared baking sheet. Combine Parmesan cheese and garlic salt in a small bowl; set aside.
  • Bake in preheated oven for 6 minutes; turn asparagus and continue baking until tender, about 6 minutes.
  • Sprinkle Parmesan cheese mixture over asparagus.

  • Melt butter in a skillet over medium-high heat. Stir in the olive oil, salt, and pepper. Cook garlic in butter for a minute, but do not brown. Add asparagus, and cook for 10 minutes, turning asparagus to ensure even cooking.

  • Melt butter with olive oil in a large skillet over medium heat. Add asparagus spears, and cook, stirring occasionally for about 10 minutes, or to desired firmness. Drain off excess oil, and sprinkle with Parmesan cheese, salt and pepper.

1 1/2 pound medium asparagus, trimmed and, if desired, peeled
2 1/2 tablespoons unsalted butter
2/3 cup freshly grated Parmigiano-Reggiano (2 oz)
4 large eggs

Steps:

  • Set oven rack in upper third of oven, then preheat oven to 425°F.
  • Cook asparagus in a large deep skillet of boiling salted water until crisp-tender, about 4 minutes. Transfer with tongs to paper towels to drain.
  • Generously butter gratin dishes using 1/2 tablespoon butter total, then divide asparagus between them. Season with salt and pepper, then sprinkle with half of cheese.
  • Heat remaining 2 tablespoons butter in a 10-inch nonstick skillet over moderately high heat until foam subsides, then fry eggs, seasoning with salt and pepper, until whites are barely set, about 2 minutes.
  • Carefully transfer 2 eggs to each gratin dish with a slotted spatula, placing on top of asparagus. Sprinkle eggs with remaining cheese and drizzle with any butter remaining in skillet.
  • Bake in upper third of oven until cheese is melted and eggs are cooked as desired, 4 to 5 minutes for runny yolks.

1 lb asparagus, fresh whole spears
2 tablespoons olive oil
1 tablespoon garlic, minced
1/4 cup shallot, thinly sliced (could also use red or yellow onion)
2 tablespoons parmesan cheese, grated
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper, freshly ground (or to taste)

Steps:

  • Prepare asparagus spears. First rinse thoroughly and cut off fibrous ends. To do this, pull one spear out of the bunch. Gently bend the spear until it snaps. Then cut the remaining spears at the same length as the first.
  • Heat oil in a large skillet over medium heat.
  • Cook garlic and shallots for five minutes or until tender but not translucent.

2 tablespoons ground paprika
2 tablespoons garlic powder
1 tablespoon baking powder
1 tablespoon salt
2 large eggs
1 cup buttermilk
2 cups Italian-seasoned bread crumbs
½ cup grated Parmesan cheese
1 bunch fresh asparagus, trimmed
1 cup peanut oil for frying, or as needed

Steps:

  • Mix together flour, paprika, garlic powder, baking powder, and salt in one bowl, eggs and buttermilk in another, and bread crumbs and Parmesan cheese in a third.
  • Coat each asparagus stalk in the flour blend, dunk into the egg mixture, then roll in the bread crumbs. Transfer to the refrigerator and let them rest for 30 minutes; this will help the breading stick during frying.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Fry asparagus in the hot oil, working in batches as needed, until breading is golden brown, about 4 minutes. Transfer to a paper towel-lined plate to drain excess grease. Serve hot.

I got this from a friend who knew I enjoyed unique easy prepared foods. Not only is this easy, it is so good! It's also one of those that will start a conversation during a party leaving your guest asking for more PLEASE! So start up your fryers and get your party started and ENJOY!

fresh asparagus
any store bought beer batter mix, or your favorite batter mix will do

parmesan cheese

Steps:

  • 1. Snap off tough ends of asparagus. Rinse asparagus with water, and leave damp.
  • 2. Start your fryer *I use vegetable oil.
  • 3. In a shallow dish, whisk together beer batter according to instuctions on package/box. *I use any beer on hand, usually Bud light.
  • 4. Dip asparagus in batter; pick asparagus up one at a time from ends to place in fryer. Fry asparagus for 4 to 5 minutes or until golden brown. Drain on paper towel adding grated parmesan cheese. *Feel free to spice it up with Tony Chachere's Seasoning. Enjoy! =D
