Time 50m

Number Of Ingredients 10

1 1/2 lbs. potatoes
2 tbsp. olive oil
1/3 tsp. salt (or to taste)
1/2 tsp. pepper
1/2 tbsp. paprika
1/2 tbsp. dried Italian herbs
1 lb. green beans, trimmed and cut in half
1/2 tbsp. olive oil
3 garlic cloves, minced
1/4 tsp. salt (or to taste)

Steps:

  • Peel the potatoes and cut them into cubes. Place them in a medium mixing bowl. Add the olive oil, salt, pepper, paprika, and Italian herbs to the potatoes and stir until all of the potatoes are coated with the mixture.
  • Empty the potatoes from the bowl onto a baking sheet, spreading them out evenly for better cooking. Place them in the oven and bake for 15 minutes at 400°F.
  • While the potatoes are cooking, take the mixing bowl (no need to wash it after the potatoes) and add the green beans. Add the olive oil, garlic, and salt, then stir them in until the beans are evenly coated.
  • Take the potatoes out of the oven and add the green beans on top of them. Spread the beans out as well, again for even cooking. Bake the pan of potatoes and green beans for another 25 minutes. Then, they are ready to serve.

Time 1h40m

Number Of Ingredients 3

1 ½kg floury potatoes (such as Maris Piper, King Edward or Desirée), peeled and cut into halves or quarters, depending on size
100ml olive oil
2 tsp smoked paprika

Steps:

  • Heat oven to 200C/180C fan/gas 6. Add the potatoes to a pan of cold salted water, bring to a boil, then simmer for 5 mins until partly tender. Drain and steam dry for a few mins in a colander.
  • Return the potatoes to the saucepan, and add the oil, paprika and plenty of salt and pepper. Cover with a lid, then shake the pan around to roughen the edges of the potatoes and thoroughly coat them in the paprika and oil. Tip the potatoes into a large roasting tin, making sure they are evenly spaced apart. Scrape in all the fluffy potato mess - these make the best crispy bits!
  • Roast the potatoes for 1 hr 15 mins, turning halfway, until extremely fluffy and crisp.

HAKE WITH PAPRIKA OIL POTATOES

Hake with paprika oil potatoes image

Let the subtle flavour and meaty texture of hake be the star of the show with just a little paprika oil to lift it. Ideal for an easy, light, romantic meal

Provided by Rosie Birkett

Categories     Dinner, Fish Course, Main course, Supper

Time 35m

Number Of Ingredients 10

200g potatoes , peeled and chopped into chunks
2 bay leaves
60ml olive oil , plus 1 tbsp
1 parsley sprig
1 red onion , finely sliced
150ml white wine , plus 1 tbsp
2 hake steaks , about 160g each
160g purple sprouting broccoli
½ lemon , juiced
1 tbsp smoked paprika

Steps:

  • Heat oven to 190C/170C fan/gas 5. Boil the potatoes in a pan of salted water with a bay leaf for about 12 mins, or until tender. Drain, reserving the cooking water.
  • Heat 1 tbsp olive oil with a bay leaf in a non-stick frying pan. Add the red onion, season with salt and pepper and fry gently. After 5 mins add a tbsp of white wine and cook for a further 10-15 mins, until softened, fragrant and starting to caramelise.
  • Season the hake steaks and rub with a little olive oil. Put them in a roasting tin and pour in the wine and 100ml of the potato water, along with the tbsp olive oil and parsley sprig. Cook for 10 mins in the oven, or until the steaks are opaque and flaking.
  • Cook the broccoli in salted water for 3-6 mins (depending on thickness) until tender. Season with lemon juice and black pepper. Pour the rest of the oil into the onion pan and gently warm it - you want it warm, but not scalding or sizzling. Stir in the smoked paprika, then turn off the heat.
  • When the fish is ready, toss the potatoes through the onions and warm oil, and divide between plates. Remove the fish from the water with a fish slice and put on the plates with the broccoli. Drizzle over the remaining paprika oil and serve.
