This recipe is from Chef Francis Lopez the Chef instructor from the Culinary Institute of America, in Hyde Park New York. This is his family recipe.

1 cup converted rice
3 cups water
1 cup raisins
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/3 cup sugar
1 tablespoon fresh lemon juice
3/4 cup part-skim ricotta cheese, pureed
2 teaspoons vanilla extract
3 cups sliced fresh fruit

Steps:

  • In a large saucepan, combine the rice, water, raisins, nutmeg, cinnamon, sugar, and lemon juice. Stir to combine. Cover and bring to a simmer. Cook until the rice is tender, approximately 30 to 40 minutes. Remove from the heat and let stand, covered, 5 to 10 minutes until the water is absorbed. Let cool. Fold in the ricotta cheese and vanilla extract.
  • Mold in individual molds and turn out onto a serving plate, or place a 1/2 cup mound in the center of 8 dessert plates. Surround with fresh fruit. Makes 8 servings.

Easiest Rice Pudding image

The starch in Arborio rice -- typically used for risotto -- makes this pudding extra creamy.

1 cup Arborio rice
1/2 cup sugar
1/4 teaspoon coarse salt
4 3/4 cups whole milk, divided
1 1/2 teaspoons pure vanilla extract
1/4 cup heavy cream
Ground cinnamon, for serving

Steps:

  • In a large saucepan, bring rice, sugar, salt, and 4 1/2 cups milk to a boil over medium-high. Reduce heat, cover, and simmer 25 minutes. Uncover and cook, stirring constantly, until rice is tender and pudding is creamy, 5 minutes. Stir in vanilla and remaining 1/4 cup milk.
  • Transfer to a serving dish and press plastic wrap directly on surface to prevent a skin from forming. Refrigerate until chilled, at least 1 hour (or up to 3 days). To serve, stir in heavy cream and sprinkle with cinnamon.

5 1/2 cups whole, low-fat or skim milk
1/2 cup sugar
2 teaspoons vanilla extract
3/4 cup long-grain white rice
3/4 cup diced ( 1/2 inch) dried fruits (raisins, apricots, figs, cherries)
1 cup yogurt or sour cream (optional)

Steps:

  • Bring the milk, sugar and vanilla to a boil in a saucepan. Add the rice, mix well, and bring the mixture back to a boil. Cover, reduce the heat to very low, and simmer for about 40 minutes, until the rice is very soft. (The mixture should still be soupy; if it is not, add enough additional milk to make it soupy.)
  • Add the dried fruits to the pudding, mix, and set aside until cooled to room temperature. Spoon into six dessert dishes and serve, if desired, with 1 or 2 tablespoons of yogurt or sour cream on top.

For whatever reason, rice pudding is usually not near the top when people list their favorite desserts, but despite that, it's a proven crowd-pleaser, and quite easy to make, especially using this simplified, one-pot method.

½ cup uncooked long-grain white rice
¼ teaspoon kosher salt
1 cup water
¼ cup white sugar
1 ⅓ cups milk
½ teaspoon vanilla extract
⅛ teaspoon ground cinnamon
1 large egg yolk
1 tablespoon cold butter
2 tablespoons dried cherries, chopped

Steps:

  • Place rice, salt, and water into a saucepan. Bring to a boil over medium-high heat. Reduce heat to low, cover, and cook until tender, about 20 minutes. Remove from heat; sprinkle with sugar and pour in milk. Stir with a whisk until until the thin layer of cooked-on starch at the bottom of the pan is cleared and incorporated into the mixture, 2 or 3 minutes.
  • Place pan over medium heat, stirring frequently, until it reaches your desired of level of doneness and creaminess, 8 to 10 minutes. The longer it cooks, the thicker and stickier it will be. Remove from heat. Add vanilla and cinnamon. Very quickly whisk in the egg yolk (to prevent it from cooking). Whisk for about 1 more minute. Add butter and dried cherries; stir thoroughly.
  • Transfer warm pudding to serving dishes. Cool to room temperature. Cover and refrigerate until thoroughly chilled, 3 to 4 hours.

6 cups whole milk
¾ cup Arborio rice
¾ cup white sugar, divided
1 teaspoon vanilla extract
¼ teaspoon salt
2 eggs
2 egg yolks
1 cup heavy whipping cream

Steps:

  • Mix milk, rice, 1/2 of the sugar, vanilla extract, and salt together in a saucepan over medium-high heat. Bring to a boil.
  • Blend remaining sugar with whole eggs and yolks in a bowl to make a creamy custard.
  • Reduce heat of the milk mixture. Let simmer, uncovered, until thickened, 30 to 40 minutes. Fold in the custard. Heat until thickened again, about 5 minutes more.
  • Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form.
  • Remove the milk and custard mixture from heat. Let cool, about 10 minutes. Fold in the whipped cream. Pour pudding into a serving dish, cover, and refrigerate until chilled, at least 2 hours.

Ricotta and Candied Fruit Puddings image

This recipe was adapted from Richard Sax's ricotta Bavarian, in his book _Classic Home Desserts_. The pudding's flavor is similar to cannoli filling, but it has the lightness of Bavarian cream. It's important to use fine-quality candied fruit.*

Yield Makes 6 servings

Number Of Ingredients 15

1 1/4 teaspoons unflavored gelatin (less than 1 envelope)
1 1/2 tablespoons whole milk
1 whole large egg
1 large egg yolk
3 tablespoons sugar
1 cup whole-milk ricotta
1/3 cup chopped mixed fine-quality candied fruit (preferably orange peel, pineapple, and citron)
1 oz grated fine-quality bittersweet chocolate (not unsweetened)
1/2 teaspoon finely grated fresh lemon zest
1/2 teaspoon finely grated fresh orange zest
1/2 teaspoon vanilla
Pinch of cinnamon
1/2 cup chilled heavy cream
Garnish: chocolate dust and chopped candied fruit
Special equipment: 6 (5- to 6-oz) ramekins or metal molds

Steps:

  • Sprinkle gelatin over milk in a small saucepan and let soften.
  • Beat together whole egg, yolk, and sugar in a small metal bowl with a handheld electric mixer until blended. Set bowl over a saucepan of barely simmering water and beat with mixer until pale, thick, and tripled in volume, about 5 minutes. (Mixture should mound when dropped from beaters.) Remove bowl from heat.
  • Heat milk over low heat, stirring, just until gelatin is dissolved, then beat into egg mixture.
  • Blend ricotta in a food processor just until smooth. Add fruit, chocolate, zests, vanilla, cinnamon, and a pinch of salt and pulse until blended, then transfer to a bowl. Stir in one third of egg mixture to lighten, then fold in remaining egg mixture gently but thoroughly.
  • Beat cream in a bowl with cleaned beaters just until it holds soft peaks, then fold into ricotta mixture gently but thoroughly. Spoon into lightly oiled ramekins and chill, covered, until firm, at least 2 hours.
  • Run a knife around edge of each ramekin, then dip ramekin into a bowl of hot tap water 10 seconds. Invert a plate over each ramekin, then invert pudding onto plate.

Steps:

  • In a saucepan, combine rice, milk, sugar, and salt. Cook over medium heat until mixture begins to bubble. Reduce heat and cover.
  • Cook 1 hour, stirring occasionally.
  • Remove from heat. Add vanilla and Pernod.
  • Cool, then refrigerate at least 3 hours.
  • Halve pears lengthwise, slice thinly, and spread out into a fan shape. Place pear and rice pudding on plates, and garnish with raspberries and anise seeds.
