This recipe is easy to make and makes an elegant-looking meal that anyone would be proud to offer to guests. This is one of the favorite dinners for my family. It can be easily increased to serve more people with a little increase in prep time.

2 pounds sirloin steak, pounded to 1/4-inch thickness and cut into 1 x 1 1/2-inch strips
½ cup red wine
¼ cup all-purpose flour
1 teaspoon salt
1 teaspoon paprika
½ teaspoon ground black pepper
¼ cup butter
1 small onion, diced
3 cloves garlic, minced
2 cups canned sliced mushrooms
1 (10 ounce) can beef broth
½ cup water
1 tablespoon Worcestershire sauce
2 teaspoons red pepper flakes
1 teaspoon prepared yellow mustard
⅓ cup cream cheese
⅓ cup sour cream
2 cups hot cooked noodles

Steps:

  • Mix steak and red wine together in a bowl; set aside to marinate for 15 to 30 minutes.
  • Combine flour, salt, paprika, and black pepper together in a resealable plastic bag. Remove steak from marinade, reserving red wine for later use; add steak to flour mixture and shake to coat.
  • Melt butter in a large skillet over medium-high heat; cook and stir steak, onion, and garlic until steak is browned and onion is softened and translucent, 10 to 15 minutes.
  • Stir mushrooms, beef broth, water, reserved red wine marinade, Worcestershire sauce, red pepper flakes, and mustard into steak mixture until well mixed; bring to a boil. Reduce heat, cover skillet, and simmer until steak is very tender, about 1 hour.
  • Stir cream cheese and sour cream into steak mixture; cook and stir until warmed, 2 to 3 minutes. Serve over cooked noodles.

200ml beef stock
250ml soured cream
2 thick sirloin steaks , about 300g each with as much fat as possible trimmed off the steak
100g butter
2 banana shallots , halved and finely sliced
200g chestnut mushrooms , quartered
1 garlic clove , crushed
2 tsp smoked paprika , plus extra to serve
pinch of porcini powder , plus extra to serve (optional)
2 tbsp red wine vinegar
½ small bunch of parsley , chopped
1 tsp English mustard

Steps:

  • Whisk the stock and all but 2 tbsp of the soured cream together. Set aside.
  • Generously season the steaks. Heat half the butter in a frying pan until sizzling, then cook the steaks for 8 mins, turning them every minute or so, until golden brown on each side. Remove and set aside.
  • Heat the rest of the butter in the steak pan, tip in the shallots and cook for about 5 mins or until starting to caramelise. Add the mushrooms and cook for a further 5 mins or until golden. Stir in the garlic and paprika along with a pinch of porcini powder and continue to cook for 1 min.
  • Add the vinegar and leave to simmer for 1 min. Turn the heat down to its lowest setting and pour in the creamy stock, stirring everything together until hot but not simmering, then taste for seasoning and add most of the parsley and the mustard.
  • Pour in any juices from the steak, before carving it into thick slices and adding to the pan. To serve, top with the remaining soured cream, then scatter with the remaining parsley, a pinch of paprika and porcini powder, if using.

1 cup water
1 envelope onion soup mix
1 can cream of mushroom soup
1 teaspoon crushed garlic
2 teaspoons Worcestershire sauce
salt and pepper
1 (500 ml) container sour cream
1 package egg noodles
paprika

Steps:

  • Brown stewing beef in water, in skillet.
  • Stir in onion soup mix, mushroom soup, garlic Worhestershire and salt and pepper.
  • Let cook over medium heat for about 15 minutes, stirring often.
  • Prepare egg noodles while mixture is cooking.
  • Add sour cream to mixture and spoon onto individual servings of egg noodles.
  • Sprinkle with Paprika and serve.

2 pounds beef top round steak, cut into thin strips
1 tablespoon plus 2 teaspoons canola oil, divided
1 large onion, sliced
1 large green pepper, cut into strips
1/2 pound sliced fresh mushrooms
1-1/4 cups reduced-sodium beef broth, divided
1 can (8 ounces) tomato sauce
3/4 cup sherry or additional reduced-sodium beef broth
2 tablespoons Worcestershire sauce
2 tablespoons prepared mustard
2 teaspoons paprika
1 bay leaf
1/2 teaspoon dried thyme
1/4 teaspoon pepper
1 package (12 ounces) yolk-free noodles
3 tablespoons all-purpose flour
1 cup reduced-fat sour cream

Steps:

  • In a large nonstick skillet coated with cooking spray, cook beef in 1 tablespoon oil until no longer pink; drain and set aside. , In the same skillet, saute onion and green pepper in remaining oil for 1 minute. Stir in mushrooms; cook for 3-4 minutes or until tender. Stir in 1 cup broth, tomato sauce, sherry or additional broth, Worcestershire sauce, mustard, paprika, bay leaf, thyme and pepper. Return beef to the pan; bring to a boil. Reduce heat; cover and simmer for 40-50 minutes or until meat is tender. , Cook noodles according to package directions. Meanwhile, combine flour and remaining broth until smooth; gradually stir into beef mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Discard bay leaf. Remove from the heat; stir in sour cream until blended. Drain noodles; serve with stroganoff.
