PW'S BREAKFAST BURRITOS

- Begin by browning the breakfast sausage in a skillet over medium heat. Drain off the grease and reduce the heat to low.
- Crack the eggs into a bowl. Add the half-and-half, seasoned salt and some pepper, and whisk to beat the eggs lightly.
- With the heat still on low, pour the egg mixture over the sausage mixture. Now, with a spoon or spatula, very gently stir the mixture. Continue lightly cooking over low heat until the eggs are set. Now taste and adjust the seasoning, adding more seasoned salt or pepper if desired.
- To assemble, warm the stack of tortillas on a paper towel in the microwave for about 30 seconds. Place a heaping spoonful of egg mixture onto the middle of a warm tortilla, and top with a spoonful of Breakfast Potatoes. Tuck in the sides and roll the tortilla until closed. Wrap in foil sheets and keep warm until ready to serve.
- For cheesy and spicy variations, add grated Monterey Jack, jarred jalapenos, hot sauce or all three.
- Preheat the oven to 375 degrees F.
- Place the potatoes on a baking sheet and bake until fork tender, about 45 minutes.
- Place the hot potatoes on a cutting board and dice them into 1-inch pieces.
- Heat a skillet over medium-low to medium heat. Next, put a tablespoon of canola oil in the skillet. Add in some butter and the onions and saute until they start to turn brown. Next, throw in the cooked diced potatoes and the peppers. Salt and pepper the potatoes, then stir them around, slightly pressing/packing them in the skillet. Cook without stirring for 5 to 7 minutes. You want to make sure the pan is hot enough to crisp the potatoes. Add more butter to the pan as necessary for moisture.
- After several minutes, use a spatula to flip the potatoes over and cook on the other side for another 5 to 7 minutes.

- Add potatoes, season to taste and sauté till warm, then add the eggs; scramble for 3 to 4 minutes, until the eggs are done to taste, but not dry.
- Place generous amount along one-third of the tortilla, about 1 inch away from the bottom.
- Fold up the lower edge, and then roll from the side to form a burrito.
- Optional items:.
- Top with mild salsa and/or Monterey-Jack Cheese.

- After the eggs are scrambled, add the ham and sausage and stir around and let cook for additional time.
- Warm the tortilla in the microwave for about 10 seconds.

- Lightly coat a nonstick skillet with cooking spray. Cook the onion and chiles in the skillet over medium heat for 3 minutes, stirring constantly.
- In a small bowl, whisk together egg substitute, cheese, pepper, and Tabasco (if using).
- Pour into skillet and scramble for 3 to 4 minutes, until the eggs are done to taste, but not dry.
- Place the egg mixture along one-third of the tortilla, about 2 inches away from the bottom. Fold up the lower edge, then roll from the side to form a burrito.

LOW-FAT BUT STILL DELICIOUS BREAKFAST BURRITO
This recipe is for a low-fat breakfast burrito that I have come up with. Even though everything in it is low fat it does NOT taste low fat at all!! Bacon, egg beaters, and cheese make this is one delectable burrito that is much lower in fat than other breakfast burritos. I have fat free cheese listed in the ingredients, but I admit that sometimes I will use half of a Kraft American Cheese Single to satisfy my cheese cravings. The addition of the american cheese really gives this burrito great taste, but use whatever cheese you like. Also, you can use any low fat bacon you like but I personally enjoy Oscar Mayer's Turkey Bacon...it is soooo tasty, I actually prefer it over all other bacon. Serve this burrito with fruit and juice for a yummy breakfast!

- Cook bacon and eggs according to package directions, add salt and black pepper to your eggs if desired.
- Layer the bacon and eggs on top of your tortilla
- Sprinkle desired amount of cheese over bacon and eggs.
- Roll your burrito up and cook on high in the microwave approximately 15 seconds to warm the tortilla and melt the cheese.
- Enjoy your burrito!

- Preheat oven to 170°F and place tortilla wraps in oven to warm while preparing remaining ingredients.
- In a small bowl whisk egg whites, cottage cheese, salt and pepper.
- In a medium skillet coated with cooking spray, sauté vegetables and beans until soft. Pour the egg/cottage cheese mixture over vegetables and cook until mixture sets. Once firm, divide egg mixture among the warmed tortillas. Roll each into a burrito.
- Garnish with low-fat, low sodium salsa.
