My wife and I sort of invented this recipe, we think. Chicken should have great flavor and the panko breadcrumbs and olive oil will give it a great crunch! Our kids love it (which is high praise in this house). Hope you enjoy as well!

cooking spray
1 cup mayonnaise
1 teaspoon paprika
¾ cup panko bread crumbs, or as needed
1 teaspoon garlic powder
4 bone-in chicken thighs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking pan with aluminum foil; coat with cooking spray.
  • Combine mayonnaise and paprika in a bowl; mix well.
  • Mix panko and garlic powder together in another bowl.
  • Spread mayonnaise-paprika mixture on each chicken thigh; press into panko mixture to coat. Place in the prepared baking pan; spritz thighs with cooking spray.
  • Bake in the preheated oven until no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

These Panko and Parmesan-coated oven fried chicken thighs are light and affordable and flavored with a mixture of honey, garlic powder, and mustard.

8 chicken thighs (about 3 pounds, bone-in)
3/4 teaspoon salt
1/4 teaspoon black pepper (freshly ground)
5 tablespoons butter (melted)
3 tablespoons mustard (spicy or grainy)
2 teaspoons maple syrup (or honey)
1/4 teaspoon garlic powder
1 1/4 cups panko breadcrumbs
1/3 cup Parmesan cheese (shredded, or about 1/4 cup grated)
1/4 to 1/2 teaspoon paprika (to taste)
2 teaspoons parsley flakes (dried)

Steps:

  • Gather the ingredients.
  • Heat the oven to 375 F. Set a rack on a large foil-lined baking sheet.
  • Pat the chicken thighs with paper towels to dry them. Trim any excess fat or skin. The skin adds juiciness and flavor, but feel free to remove it if desired.
  • Sprinkle the chicken pieces with 3/4 teaspoon salt and 1/4 teaspoon pepper.
  • In a small bowl, combine the melted butter with the mustard, maple syrup or honey, and garlic powder.
  • In another shallow bowl, combine the panko crumbs with shredded or grated Parmesan cheese, paprika, 1 teaspoon salt, 1 teaspoon pepper, and parsley.
  • Brush or rub the chicken thighs all over with the butter and mustard mixture and then press all sides in the panko mixture to coat thoroughly.
  • Place the coated chicken thighs on the rack over the prepared baking sheet.
  • Bake for 40 to 45 minutes or until the chicken reaches 165 F. The juices should run clear when the chicken is pierced with a fork.

This simple recipe is my invention. I am a lover of chicken and I especially enjoy baked chicken. I love the dark meat and it is so tasty when it's coated because that seals in the juices keeping the meat tender and delicious.

2 1/2 lb chicken thighs (skinless and boneless and fat removed)
1 pkg panko bread crumbs
1/4 c egg whites
fresh cracked black pepper
sea salt

Steps:

  • 1. Heat your toaster oven to 375'F. Put the oven on the convection setting.
  • 2. Line your toaster oven baking tray with heavy aluminum foil. Spray the aluminum foil with baking oil
  • 3. Clean the chicken thighs by removing all the excess fat. Wash and pat dry.
  • 4. Put the egg white in a shallow bowl. Put the panko bread crumbs in a shallow bowl.
  • 5. Dip the thighs in the egg white. Roll in the Panko. Make sure you cover all the meat.
  • 6. Place in the prepared baking tray and sprinkle with fresh cracked black pepper and sea salt. Spray the tops of the chicken with more cooking spray. Bake for 30 minutes.
  • 7. Remove from oven and let the meat sit for 10 minutes then serve.
  • 8. Enjoy!

½ cup all-purpose flour
2 large eggs
2 tablespoons water
2 cups panko bread crumbs
2 teaspoons dried rosemary
2 teaspoons adobo seasoning
8 (8 ounce) bone-in, skinless chicken thighs

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  • Place flour in a medium bowl. Crack both eggs into a similar bowl, add the water, and whisk with a fork until they take on a uniform consistency. Place panko bread crumbs in a third bowl, add adobo seasoning and rosemary, and mix. Set the bowls so the flour is on the left, the egg wash is in the center, and the bread crumbs are on the right.
  • Dredge both sides of thighs in flour, shaking off excess. Dip in egg wash, turning over to coat both sides. Let excess drip off. Drop into bread crumbs, rolling to coat evenly. Place on the prepared baking sheet. The chicken should move from bowl to bowl in a line from left to right, with no jumps back left. Repeat with remaining chicken.
  • Bake thighs in the preheated oven until no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Let cool for 10 minutes before serving.

3/4 cup light sour cream
3 crushed garlic cloves
1/2 teaspoon harissa
1/4 teaspoon salt
1/16 teaspoon pepper
1/2 teaspoon onion powder
1/4 teaspoon paprika
1 cup Italian seasoned breadcrumbs
1/2 cup panko breadcrumbs
1/4 cup parmesan cheese
2 tablespoons melted butter

Steps:

  • Combine sour cream, garlic, onion powder. paprika, harissa, salt and pepper. Set aside.
  • Pat chicken dry add to sour mixture combining it well so it is all covered.
  • Set in refrigerator for at least 2 hours, longer if possible. Turn them around a few time.
  • Line cookie sheet with parmesan paper.
  • Place on Baking sheet.
  • Mix bread crumbs, Panko and parmesan cheese together.
  • Roll sour cream chicken in Bread crumb mixture covering them thoroughly.
  • Spoon on the melted butter.
  • Place on preheated 350* convection oven.
  • Bake uncovered 45 minutes until your chicken is cooked.
  • Tip: Add potato wedges that you have seasoned with olive oil and garlic.

Steps:

  • Honestly the above ingredient list is all approximate guesses. I just dumped stuff into the ziplock bag until it looked like seasoned flour.
  • Take all ingredients above (except for chicken thighs) and dump into a gallon size resealable bag.
  • close bag, shake to mix well.
  • preheat your convection oven to 375 degrees Fahrenheit.
  • Rinse and pat dry your chicken pieces.
  • Then take chicken pieces (I did three at a time) and drop into your bag of homemade 'shake 'n bake and shake to coat evenly.
  • lightly oil your broiling pan and then place chicken pieces with space around each one. I personally cooked 6 and then the remaining 4- because that's how much space I had in my broiling pan.
  • place in convection oven set on BAKE (with convection on) at 375 degrees Fahrenheit for 60 minutes.

⅓ cup shredded Parmesan cheese
2 teaspoons dried parsley flakes

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large baking pan with foil, then lightly spray with nonstick cooking spray.
