CINNAMON-PANCETTA CARBONARA

4 slices bacon, chopped
4 slices pancetta, chopped
1/4 teaspoon ground cinnamon
2 cups whipping cream
1 1/2 cups freshly grated Parmesan
6 large egg yolks
18 ounces fresh fettuccine
Salt and freshly ground black pepper
2 tablespoons chopped fresh chives

Steps:

  • Saute the bacon and pancetta in a heavy large frying pan over medium heat until almost crisp, about 5 minutes. Sprinkle the cinnamon over the bacon and pancetta and saute until the bacon is crisp and golden, about 2 minutes longer. Cool. Whisk in the cream, cheese, and yolks to blend.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the fettuccine and cook until it is just tender but still firm to the bite, stirring occasionally, about 3 minutes. Drain. Add the fettuccine to the cream mixture and toss over medium-low heat until the sauce coats the pasta thickly, about 5 minutes (do not boil). Season the pasta, to taste, with salt and pepper. Transfer the pasta to a large wide serving bowl. Sprinkle with chives and serve.

I tried several Belgian waffle recipes after getting my iron. In the end, I combined my 1st choice with my husbands favorite to come up with this recipe.

2 egg yolks
1 teaspoon vanilla extract
1 cup buttermilk
¼ cup butter, melted
1 cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ tablespoon white sugar
¼ teaspoon salt
2 egg whites
1 pinch ground cinnamon

Steps:

  • Preheat your waffle iron.
  • In a medium bowl, whisk together the eggs, vanilla, buttermilk and butter until well blended. Combine the flour, baking powder, baking soda, sugar, salt and cinnamon; stir into the buttermilk mixture. In a separate bowl, whip the egg whites with an electric mixer until stiff. Fold into the batter.
  • Spoon batter onto the hot waffle iron, close, and cook until golden brown. Waffles are usually done when the steam subsides.

1/2 cup chopped walnuts
1 tablespoon olive oil
3 (4-ounce) slices of pancetta, each about 1/4 inch thick, diced into 1/4-inch pieces
3 cups Belgian waffle mix, such as Krusteaz
2 large eggs
1/3 cup vegetable oil, plus more for the waffle iron
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 cup pure maple syrup, warm
Special Equipment
A Belgian or conventional waffle iron

Steps:

  • Preheat the oven to 350°F.
  • Spread the walnuts in an even layer on a rimmed baking sheet. Bake for 10 to 12 minutes, until toasted and fragrant. Set aside to cool.
  • Preheat and lightly grease a waffle iron.
  • Heat the olive oil in a medium skillet over medium-high heat. Add the pancetta and cook until brown and crispy, 3 to 5 minutes. Transfer the pancetta to a paper towel-lined plate to cool.
  • In a large mixing bowl, combine the waffle mix, eggs, vegetable oil, 1 1/2 cups water, the cinnamon, and salt. Using a whisk, blend the ingredients together until smooth. Stir in the pancetta. Pour the batter, using the amount recommended by the waffle iron manufacturer's instructions, into the preheated waffle iron. Cook waffles for 3 to 4 minutes, or until golden brown.
  • Place the waffles onto serving plates. Sprinkle with the chopped walnuts and drizzle with the maple syrup. Serve immediately.

If you like those cinnamon waffles from the frozen food department of the grocery store, you'll love these! I developed this recipe because I don't care for syrup. Most waffles need the sweetness of syrup to make them special. These waffles are yummy just as they are; no syrup necessary! Whipped cream and fruit are a great addition if you want to go all out or just add butter and powder sugar to the top. These may brown quicker than standard waffles because of the sugar in them, so test the first one and adjust the time. I have also added 2 tablespoons ground flaxseed; you can't taste a difference. Enjoy!

  • Fold the the beaten egg whites into the batter.
  • Preheat a waffle iron and coat with cooking spray.
  • Pour batter onto waffle iron in batches and cook until crisp and golden brown, about 2 minutes; repeat until all batter is used.
