Crowd pleasing banana pancakes made from scratch. A fun twist on ordinary pancakes.

1 cup all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
¼ teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed

Steps:

  • Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
  • Stir flour mixture into banana mixture; batter will be slightly lumpy.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

Number Of Ingredients 8

1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, lightly beaten
1 cup milk
2 tablespoons unsalted butter, melted, plus more for sauteing banana slices
2 bananas, peeled and sliced into 1/4-inch-thick rounds

Steps:

  • Preheat oven to 175 degrees. Whisk flour, sugar, baking powder, and salt in a medium bowl. Add egg, milk, and butter; whisk until combined but still slightly lumpy.
  • Heat a large nonstick skillet over medium heat. Place 5 banana rounds in pan, about 3 inches apart. Spoon 1 tablespoon batter over each; cook until large bubbles cover surface, 1 to 2 minutes. Flip, and cook until bottom is golden, about 1 minute more. Transfer to a baking sheet, and keep warm in the oven.
  • Repeat with remaining banana rounds and batter. Saute extra banana slices in butter until golden; serve with pancakes.

3 large eggs
1 cup sifted all-purpose flour
½ cup milk
3 tablespoons baking powder
2 tablespoons vegetable oil
2 large ripe bananas, mashed
1 ripe banana, sliced
¾ cup maple syrup, warmed - or to taste

Steps:

  • Preheat a griddle to medium heat.
  • Beat eggs in a mixing bowl until frothy, about 2 minutes. Add flour, milk, baking powder, and vegetable oil to the eggs and mix to make a batter. Stir mashed bananas into the batter.
  • Ladle batter in 1/4 cup portions onto hot griddle. Cook until tiny air bubbles form on top, 2 to 5 minutes; turn and continue cooking until the bottoms are browned, 2 to 3 minutes. Repeat with remaining batter. Keep finished pancakes warm. Top pancakes with banana slices and maple syrup to serve.

I got this easy recipe off my mum and added the sliced bananas as a tasty surprise. I serve mine stacked w maple syrup, dollop of whipped cream, handful of fresh berries and another quick squirt of maple syrup.. just to be naughty (Bananas are an optional extra) --Enjoy..

Number Of Ingredients 6

2 cups self-rising flour
1/4 cup sugar
2 eggs
2 cups milk
3 drops vanilla essence
2 bananas (sliced diagonally to fit inside pancake)

Steps:

  • Combine all ingredients (except bananas) w a wooden spoon in a large bowl.
  • Mix w electric mixer on medium speed fr 2 min (scraping down sides halfway through w wooden spoon).
  • Let sit for 20 min (batter will thicken).
  • Heat a large pan on medium/low heat WITHOUT butter.
  • Pour batter onto pan (I usually fit about 3 in one large pan).
  • If adding bananas, gently place 3 slices onto one pancake now.
  • Once bubbles appear evenly flip (other side only takes about 30-40 secs).
  • Serve w your own choice of toppings.
