These Small Batch Pancakes are perfect for breakfast or dinner or whenever that pancake craving hits!

Number Of Ingredients 8

1 egg
1 cup buttermilk
3 TBSP canola oil
1 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 Tbsp sugar

Steps:

  • Combine dry ingredients in a bowl, forming a well in the middle.
  • Combine wet ingredients in a bowl.
  • Pour wet ingredients into dry and stir until just combined. Batter will be lumpy.
  • Let batter rest for 10 minutes.
  • Using a cookie or muffin scoop, pour batter onto a hot, lightly greased griddle.
  • Cook until bubbles form. Flip pancakes and finish cooking.

2 cups brown sugar
1 cup of water
1/2 cup butter
1/4 teaspoon vanilla or maple extract

Steps:

  • In a medium saucepan over medium-high heat, place the brown sugar and water. Bring mixture to a boil, while stirring, until the sugar has dissolved.
  • Reduce the heat to medium and simmer for 4 minutes.
  • Add the butter and stir until it has melted into the brown syrup. Turn off the heat, add the vanilla or maple extract, and stir.
  • Serve immediately.
  • Refrigerate leftovers in a jar and keep in the refrigerator for up to one month. To reheat, microwave in 15-second intervals, stir until the syrup is smooth, and has heated through.

1 cup packed brown sugar
1 cup sugar
1 cup water
1 teaspoon maple flavoring

Steps:

  • In a small saucepan, combine the sugars and water. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; stir in maple flavoring. Refrigerate leftovers.
