- Preheat oven to 350 degrees F
- Spray mini muffin tin with non stick spray.
- In a bowl mix together pancake mix according to the package instructions.
- Fill each mini muffin tin 1/2 of the way full of pancake mix. Add in your favorite topping or mix in.
- Bake at 350 degrees for 10 minutes.
- Serve immediately or store in an air tight container in the fridge or freezer until ready to enjoy.

- Preheat oven to 350 degrees F. Spray mini muffin tin with non stick cooking spray.
- Whisk together wet ingredients: eggs, milk, oil, and syrup in a medium bowl. In a separate large bowl mix together dry ingredients: flour, baking powder, and salt. Then add dry mixture to wet ingredients, and stir just until mixed (don't over mix, it's okay if the batter is lumpy). This will ensure that your pancake bites are fluffy and not dense.
- Pour batter into each muffin tin about 3/4 of the way full.
- Add in chocolate chips, blueberries, or toppings of choice.
- Bake for 10-12 minutes until edge of each pancake bite is golden brown. Adjust cooking time as needed based on individual oven.
- Serve warm, or store in an airtight container.

- Lay each pancake on a work surface and spread a little of the soft cheese in the centre of each. Tear or snip the peppers and aubergines into pieces and scatter them over the cheese. Lay about 3 basil leaves on top of each pancake, then sprinkle generously with freshly ground black pepper and a little salt.
- Fold two sides of each pancake into the centre, then the opposite two sides to make a square parcel. Cut diagonally through the middle to make two triangles. Serve at room temperature and eat with your hands.
