PAN SEARED VENISON LOIN WITH BLUE CHEESE
Steps:
- Season Venison with Salt and Pepper. Over high heat sear Venison in the clarified Butter in an ovenproof sauté pan. Turn over and finish in a 450 degree oven for a few minutes until medium rare. (Pull them a little early, since the fat content is so low they will carry over more than beef does) Remove from pan and keep warm. (Use caution, as the pan's handle will be hot) Remove excess fat and return pan to medium heat and add Shallots. Sauté until translucent and deglaze with Port and Creme de Cassis. Add the Dried Currants and Bay Leaf. Reduce by 1/2. Add Demi Glace and reduce by 1/3. Strain and adjust seasoning. Spoon some sauce on a warm plate, slice Venison and fan over sauce. Serve with 1 1/2 ounces of Blue Cheese.
PAN-SEARED VENISON WITH ROSEMARY AND DRIED CHERRIES
Steps:
- Grind 1 teaspoon rosemary with coriander seeds and garlic with a mortar and pestle to make a paste, then stir in 1/2 teaspoon oil.
- Pat venison dry and put in a bowl, then rub with paste. Season well with pepper, then cover and chill 20 minutes.
- Preheat oven to 450°F.
- Heat a well-seasoned cast-iron skillet over high heat until hot, then add remaining teaspoon oil, tilting skillet to coat evenly. Season venison well with salt, then brown, turning once, about 6 minutes total.
- Transfer skillet to middle of oven and roast venison until an instant-read thermometer inserted diagonally into center registers 125°F, 7 to 10 minutes. Transfer meat to a plate and cover tightly with foil.
- Add wine and cherries to skillet and deglaze by boiling over moderately high heat, stirring and scraping up brown bits. Stir together broth, water, cornstarch, and remaining 1/2 teaspoon rosemary in a bowl and add to skillet. Simmer, stirring, until mixture is thickened, about 5 minutes. Whisk in jelly and salt and pepper to taste.
- Cut venison into 1/4-inch-thick slices and serve with sauce.

- Put the flour on a small plate and sprinkle generously with seasoning. Salt and pepper the venison medallions on both sides, then dredge in flour to coat both sides.
- Heat a cast-iron pan over medium heat, then coat the bottom lightly with a bit of the butter. Add the tenderloins and set a timer to cook for 2 minutes or until browned and seared on the bottom, then flip and cook for 2 minutes longer until browned on the bottom, but still red/pink in the middle.
- Remove the venison to a serving plate. Add a little splash of white wine to the pan to deglaze, using a spatula to scrape up all the good flavors from the pan. Once the wine has mostly evaporated, add a bit more butter, then the garlic and saute for just a bit, until fragrant. Reduce heat to medium low, then pour in 1/4 cup of the wine and add the cream cheese and a few blue cheese crumbles. Use a silicon spatula to smash the cream cheese and melt it, stirring it into the sauce until smooth and thickened. Taste and add more blue cheese if desired or more wine if the sauce seems too thick.
