CHILI LIME PAN SEARED TILAPIA
Tilapia is seasoned with a sweet and spicy rub and finished up with a bright and fresh apple salsa for a delicious quick meal.

Steps:
- Defrost your fish fillets in a bowl of cold water for 20-30 minutes or overnight in the refrigerator.
- Mix together the sugar, chili powder, salt, garlic powder and zest of 1 lime together in a small bowl.
- Remove tilapia fillets from the package and pat dry. Rub both sides of each fillet with the spice mixture.
- Heat oil in nonstick skillet over medium high heat.
- Cook tilapia fillets for 4 minutes per first side and then carefully flip.
- Squeeze juice of one lime over fish in pan and let fish continue to cook 2-3 minutes or cooked through and opaque and flaky.
- Remove the tiapia from the skillet and let rest for 5 minutes. Serve with or without the salsa.
- Mix together apple, cilantro, and red onion with juice from second lime. Season with salt and mix well.

Here we brushed the tilapia with a combination of Chinese Five-Spice Powder, salt, cayenne pepper, and oil. Steps:
- PREPARE HOT ORANGE-GINGER SAUCE:.
- Whisk marmalade, orange juice, vinegar, gingerroot, and pepper flakes together in small bowl.
- Saute garlic in saucepan with oil over med-hi heat for 30 seconds.
- Add marmalade mixture and simmer, stirring continuously, until sauce thickens, about 5 minutes.
- Season with salt.
- PREPARE FIVE-SPICE POWDER:.
- Grind all your spices, until it is all blended together.
- Makes 1/4 cup of powder - will keep for several months in an airtight container.
- PREPARE TILAPIA:.
- Mix five-spice powder, salt and cayenne pepper with 2 T oil in small bowl.
- Pat fillets dry; brush both sides with spice mixture.
- Heat remaining 1 T oil in large nonstick skillet over med-hi het until skillet is lightly smoking.
- Add fillets; saute 3 minutes on each side.
- Sprinkle with scallions.
- Serve with Hot Orange-Ginger Sauce & vegetable fried rice.
- Enjoy.

SPICY ORANGE TILAPIA
Steps:
- In a shallow bowl, whisk together the flour, salt, and pepper. Coat the tilapia fillets in the flour mixture, shaking off any excess.
- In a large skillet over moderately high heat, heat 2 tablespoon of the oil until hot but not smoking. Carefully add the fillets and cook for 3 minutes. Flip the fillets and continue cooking until firm to the touch, about 2 minutes. Transfer to a platter and cover to keep warm.
- Wipe the pan clean, add the remaining 2 tablespoons oil, and place over moderate heat. Add the onion and sauté, stirring frequently, until tender, 6 to 7 minutes. Add the orange juice, lemon juice, ginger, and sriracha and bring to a simmer. Whisk in the butter, then remove the sauce from the heat, spoon over the tilapia, and serve immediately.
PAN-SEARED TILAPIA
Steps:
- Rinse tilapia fillets in cold water and pat dry with paper towels. Season both sides of each fillet with salt and pepper. Place the flour in a shallow dish; gently press each fillet into the flour to coat and shake off the excess flour.
- Heat the olive oil in a skillet over medium-high heat; cook the tilapia in the hot oil until the fish flakes easily with a fork, about 4 minutes per side. Brush the melted butter onto the tilapia in the last minute before removing from the skillet. Serve immediately.

GRILLED MAHI MAHI AND ORANGE GINGER SAUCE
Mahi Mahi marinade in citrus juice and ginger and dark soy suace. I severed with steamed asparagus and rice . The process is a little labor intensive but well worth it.

- Preheat to medium high. Slightly oil grate to prevent fish from sticking. Season mahi mahi with salt and pepper. Combine lime juice, soy sauce, ginger paste and oil mix well. Place mahi mahi in plastic bag and add marinade. Marinade for 20-30 minutes. Grill for 6 - 8 minutes on each side.
- Meanwhile drain marinade into sauce pan. Bring to a boil and reduce until reduced by half. Add brown sugar and butter.
- Plate mahi mahi with sauced drizzled on top.

PAN-SEARED CRUSTED SALMON WITH CHERRY TOMATO-GINGER SAUCE
In this recipe, fresh ginger flavors the sauce, and ground ginger and other warm spices are rubbed on the fish to make a flavorful, crisp crust. Be sure to buy whole coriander seeds and grind them in a food processor or spice grinder; pre-ground coriander will be too fine.

- In a small bowl, combine the coriander, ground ginger, and cayenne and mix with 1 tablespoon plus 1 teaspoon of the oil to make a paste.
- Pat the paste on both sides of the salmon fillets and season with salt and pepper.
- Heat a 12-inch heavy-based skillet over medium-high heat.
- Add the remaining 1 tablespoon oil and swirl to coat.
- When the oil is hot but not smoking, add the fillets and cook until the bottom is well browned and the bottom half of the fish becomes opaque, 3 to 4 minutes.
- Turn the fish and cook until browned on the second side and just cooked through, another 3 to 4 minutes.
- Transfer to a warm platter.
- Pour off all but a film of fat from the pan.
- Add the garlic and sauté until fragrant, about 15 seconds.
- Add the tomatoes, sprinkle with salt, and sauté until slightly softened, about 2 minutes.
- Remove from the heat, toss in the ginger, and pour the tomatoes over the fish.
- Put the pan over high heat.
- Add the wine and boil until reduced by half.
- Add the broth; boil until reduced by half again.
- Off the heat, swirl in the butter.
- Season with salt and pepper to taste.
- Pour the sauce over the salmon and tomatoes, sprinkle with the cilantro, and serve immediately.
