PAN-FRIED CHICKEN & SHAKEN PEAS

- Drizzle the oil over the chicken and season. Heat a heavy-based frying pan and put the chicken in, skin side down. Fry on a high heat for 3-4 minutes until the skin is golden and crisp. Turn the chicken over and fry on a medium heat for a further 6-8 minutes until just cooked.
- Meanwhile, melt the butter in a pan. Add the onion and garlic and cook on a low heat until soft and transparent. Stir in the horseradish cream and crème fraîche and simmer for 2-3 minutes.
- Toss in the peas, lettuce and sugar and season well. Simmer for 2-3 minutes until the lettuce has wilted slightly, then remove from the heat and scatter in the mint. Divide the peas between hot plates, top with the chicken and serve with buttered new potatoes.

SHAKE AND BAKE CHICKEN THIGHS WITH PARMESAN PEAS

- Make the chicken: Heat oven to 450 degrees. Set a rack inside a large rimmed baking sheet. In a large resealable plastic bag, combine the crushed cereal, granulated garlic and onion, salt, pepper and oil, and mix until well blended.
- Add half the chicken to the bag and shake, pressing gently to help coating adhere; transfer to rack. Repeat with remaining chicken. Bake for about 20 minutes until golden, crisp and cooked through.
- Meanwhile, cook egg noodles, according to package directions. Add butter and salt, to taste.
- While the chicken and noodles cook, make the buttered peas: In a large skillet over medium heat, melt the butter. Increase the heat to medium-high, add the peas and season with salt and pepper. Cook over moderate heat, stirring, until warmed through, about 3 minutes. Stir in the Parmesan. Serve the chicken with peas and noodles.

CHARLES' COUNTRY PAN FRIED CHICKEN

- In a bowl or resealable plastic bag, season the chicken with 1 tablespoon salt, 1/2 teaspoon pepper and the garlic powder. Cover or seal and refrigerate overnight or up to 24 hours.
- Pour 1/2 to 1 inch of oil into a deep 12-inch cast-iron skillet and heat until a pinch of flour sizzles upon contact (about 360 degrees F). Set a wire rack on top of a rimmed baking sheet and set aside. In a bowl, whisk together the milk and eggs. Place the flour in a separate bowl. Dip the chicken in the egg wash, drain off the excess, then dredge in the flour, shaking off the excess.
- Working in batches, place the chicken skin-side down in the skillet and fry for 3 minutes without moving. Continue to fry, turning the chicken every 1 to 2 minutes to ensure even browning and cooking, until the chicken is cooked through, 11 to 15 minutes. Drain on the rack and serve hot, warm or at room temperature.

- In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until the fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving the fat in the pan. Add the chicken and brown for 4 mins each side.
- Push the chicken to one side of the pan and tip in the garlic and spring onions, cooking for about 30 secs, just until the spring onion stalks are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins.
- Increase heat under the pan. Tip the peas and lettuce into the sauce and cook for 4 mins, covered, until the peas are tender and the lettuce has just wilted. Check chicken is cooked through. Stir in the crème fraîche just before serving.

- Season the chicken. Set a large frying pan over a medium-high heat. Add the olive oil and fry the chicken skin-side down for 2 minutes or until the skin begins to colour, then turn over and reduce the heat to medium-low. Fry gently for 6 minutes, then turn over again and continue to cook for 4 minutes or until golden and cooked through. Remove and keep warm in a covered bowl.
- While the chicken is cooking, prepare your ingredients. Remove the fat from the bacon and slice into lardons. Finely chop the garlic and slice the onions into pea-size chunks. Trim and roughly slice the lettuces.
- Once the chicken is cooked, add the bacon to the pan. Fry briskly for 2 minutes or until it begins to colour, then reduce the heat and mix in the garlic and spring onions. Fry for a few seconds, then stir in the stock. Bring up to a full boil, scraping the pan as you do so. Allow the stock to bubble and reduce slightly, then mix in the peas and lettuce. Return to the boil, cover and simmer for 5 minutes or until the peas are tender.
- Quickly stir the butter into the peas and remove from the heat. Adjust the seasoning to taste and serve immediately, with the chicken.
