Roasted garlic is great served with bread, crackers or apples. People can peel off a clove of the garlic and literally squeeze the garlic out of it's shell onto their bread or cracker. Delicious!

10 medium heads garlic
3 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Arrange heads of garlic on a baking sheet. Sprinkle garlic with olive oil. Bake for 40 minutes to 1 hour, when the garlic is soft and squeezable, it is ready. Remove, let cool, and serve.

Roasting garlic couldn't be easier. You'll love the mellow, rich flavor so much you'll be popping cloves straight into your mouth!

1 head garlic (outer paper leaves discarded but bulb left intact)
1-2 teaspoons extra-virgin olive oil

Steps:

  • Preheat oven to 400F.
  • Cut the top 1/2 inch from garlic bulb (straight across the top so you cut into just the tops of the cloves). Place garlic bulb in a ramekin, drizzle with olive oil and cover with foil.
  • Roast for 30-40 minutes or until garlic is very soft and lightly browned. Remove from oven and allow to cool.
  • Squeeze the garlic out of its skin and into a small dish. Mash with a fork and use as desired.

Garlic bulbs (, as many as you want)
Olive oil (, as needed)

Steps:

  • Preheat the oven to 350 degrees. Cut the top ¼ inch from the top of the bulb. Alternatively, separate the cloves from the bulb, and rub off the papery outer skins. Either way, place the garlic in a baking dish.
  • (Or roast in aluminum foil. The sheet of foil needs to be large enough to fold over itself and the garlic.)
  • Drizzle the garlic with olive oil. Add a couple of tablespoons of water. Cover tightly.
  • Bake for about 1 hour, until the garlic is completely soft inside.

12 garlic cloves, peeled (Note 1)
olive oil
pinch salt and sugar (optional)
1/2 Focaccia bread or baguette
2 tablespoon finely chopped parsley (optional Garnish)

Steps:

  • Heat oven to 375F.
  • PREPARE GARLIC FOR ROASTING: Place peeled garlic cloves on a double layer of tin foil. Drizzle oil over cloves to coat - about 2 tablespoons. Add pinch of salt and sugar if desired (I do), Lift edges of tin foil upward to enclose garlic. Scrunch top if tin foil together to seal garlic pouch. Lay it on a pan in case of leaking.
  • ROAST GARLIC: Place pouch on pan in oven. Roast for 40-55 minutes, depending on size of garlic cloves. Garlic is ready when it's soft, golden and slightly caramelized.
  • MAKE APPETIZER AND SERVE: Heat Focaccia (or other bread) in 350F pre-heated oven for 5-6 minutes or until warmed through and slightly crisped up. Transfer to cutting board and cut into bite size pieces (2-3 inches). Drizzle with garlic cloves along with the garlic-infused oil. Top with chopped parsley if desired. Serve with a butter knife if guests want to spread garlic on bread.

24 very thin slices white bread
Refrigerated butter-flavored spray
6 to 8 unpeeled garlic cloves
1 tablespoon olive oil
1 package (8 ounces) reduced-fat cream cheese
2 tablespoons butter
2 teaspoons minced chives
1/4 teaspoon salt
Fresh parsley sprigs

Steps:

  • Cut each slice of bread with a 2-in. round cookie cutter. Spritz one side of each bread round with butter-flavored spray; press spritzed side up into miniature muffin cups coated with cooking spray. Bake at 350° for 10-15 minutes or until golden., Place garlic cloves on a piece of aluminum foil. Pour oil over garlic; fold foil around garlic and seal tightly. Bake at 350° for 25-30 minutes or until garlic is very soft. When garlic is cool, remove from skins and mash., In a bowl, beat cream cheese, butter, chives and salt until smooth. Add garlic; beat until combined. Mound rounded teaspoonfuls of cream cheese mixture into each bread cup. Garnish with parsley.
