GERMAN APPLE PANCAKE
If you're looking for a pretty dish to make when having guests for brunch, try this. Everyone I've served it to has enjoyed it-except for one time, that is, when my husband tried to make it following my recipe, which I'd written down incorrectly! - Preheat a 10-in. cast-iron skillet in a 425° oven. Meanwhile, in a blender, combine the eggs, milk, flour, salt and nutmeg; cover and process until smooth. , Add butter to hot skillet; return to oven until butter bubbles. Pour batter into skillet. Bake, uncovered, for 20 minutes or until pancake puffs and edges are browned and crisp. , For topping, in a skillet, combine the apples, butter and sugar; cook and stir over medium heat until apples are tender. Spoon into baked pancake. Sprinkle with confectioners' sugar. Cut and serve immediately.

- Preheat oven to 450 degrees.
- Combine pancake mix, water, eggs and 1 tsp sugar and mix well.
- Saute apples in melted butter in 9 or 10" ovenproof skillet over medium high heat until tender.
- Remove skillet from heat and sprinkle apples with pecans.
- Pour batter over skillet mixture.
- Combine remaining sugar and cinnamon and sprinkle over batter.
- Cover skillet with lid or foil and bake for 12 to 14 minutes or until pancake is puffed and sugar is melted.
- Loosen sides of pancake from skillet and cool slightly.
- Cut into wedges and serve with maple syrup and bacon or sausage if desired.

Steps:
- 1. Heat oven to 450. Combine pancake mix, water, eggs and 1 teaspoon sugar in a bowl; mix well. In 9 or 10 inch oven-proof skillet, saute apples in melted butter over medium-high heat until tinder.
- 2. Remove skillet from heat; sprinkle apples with nuts. Pour batter evenly over apples and nuts. Combine remaining sugar and cinnamon; sprinkle over batter.
- 3. Cover skillet with lid or foil; bake at 450 for 12 to 14 minutes or until pancake is puffed and sugar is melted. Loosen side of pancake from skillet; cool slightly. Cut into wedges.
- 4. Note: If oven-proof skillet is not available, saute apples in standard skillet; transfer to 9 or 10 inch pie plate. Proceed as recipe directs.

- Preheat oven to 350 degrees F (175 degrees C). Mix together pancake mix, milk and egg until blended. Set aside.
- Pour melted butter in 9-inch pie plate. Place apple slices in bottom of pie plate. Sprinkle cinnamon and pecans over apples and drizzle syrup over top. Pour batter over apples.
- Bake at 350 degrees F (175 degrees C) for 30 minutes or until top springs back when touched. Loosen edges and invert onto serving platter. Cut into wedges before serving.

- Preheat the oven to 450 degrees. Beat together the eggs, milk, flour, and salt until very smooth. Add some very thinly sliced apples if desired. In a heavy 12-inch skillet, melt about 1 1/2 Tablespoons butter. As soon as it is quite hot, pour in the batter and put the skillet in the oven. After 15 minutes, lower the oven temperature to 350 degrees and continue baking for another 10 minutes. The pancake should be light brown and crisp.
- During the first 10 to 15 minutes of baking, the pancake may puff up in large bubbles. If it does, pierce it thoroughly with a fork or skewer.
- While the pancake is baking, prepare the apple filling. Peel and thinly slice a pound of apples. Saute them lightly in 1/4 cup butter and add 1/4 cup sugar. Season to taste with cinnamon and nutmeg. The apples should be just tender, not too soft. About 8 to 10 minutes of cooking over a medium flame should be plenty. (The filling can be prepared ahead and re-heated just before serving.).
- When the pancake is ready, slide it onto an oval platter, pour the apple filling over one side, and fold the other side over. A little melted butter can be poured on it you choose, and the whole thing carefully sprinkled with powdered sugar through a sieve. Serve it at once, slicing pieces off crosswise.

- In a large bowl, whisk together flour, granulated sugar, salt, nutmeg, and ground ginger. In a medium bowl, whisk together half-and-half, eggs, and vanilla extract. Pour the half-and-half mixture into the flour mixture and whisk until smooth, without lumps.
- In a 10-inch nonstick ovenproof skillet set over medium-high heat, melt the butter. Add the apples and brown sugar. Cook, stirring frequently, until the apples are golden brown, about 10 minutes. Remove the skillet from the heat and stir in lemon juice. Pour the batter around the edges of the pan and then over top of the apples.
- Place the skillet into the oven and immediately turn the heat to 425 degrees F. Bake until the pancake is brown and it has puffed above the edges of the skillet, 15 to 18 minutes. Using a rubber spatula, loosen the edges of the pancake from the skillet and invert the pancake onto a serving platter. Sift powdered sugar over the top of the pancake and cut it into wedges. Serve immediately.
