Outrageously Easy and Healthy Bean, Corn and Sprouts Bowl for One (Vegan) image

I put this together tonight when there was nothing appetizing to eat at home, and I didn't feel up to any sort of elaborate cooking. This makes a fantastic, light, summer meal on its own, or can be served with warm garlic bread. Adjust the spices to suit your taste.

Yield 1 unabashedly healthy bowl

Number Of Ingredients 9

1/2 cup cooked kidney bean, cooked with salt
1/2 cup frozen corn
1/2 cup mung bean sprouts (I use a mixture of different sprouts)
1 tablespoon salsa (I use a mild variety)
1/8 teaspoon ground cumin
1/8 teaspoon paprika
salt and pepper (to taste)
1/4 cup water
parmesan cheese (optional)

Steps:

  • Combine all the ingredients except the parmesan cheese in a saucepan; mix well.
  • Heat over a high flame, stirring occasionally, until all the water has evaporated (around 5 minutes).
  • Remove from flame, transfer to a bowl and sprinkle with parmesan cheese, if desired.
  • Serve hot with warm garlic bread, or a tall glass of fruit juice.
  • Enjoy!

Outrageously Easy Big Bread image

This no knead handmade bread is not only easy to make, but also vegan! It's gained popularity on food blogs, and now you can try it too. I originally saw it published on vegweb by a user submission.

Yield 2 loaves

Number Of Ingredients 8

1/2 ounce active dry yeast (2 packets)
1/4 cup warm water
2 cups hot water
3 tablespoons sugar
1 tablespoon salt
3 cups flour
1/3 cup vegetable oil
3 cups flour

Steps:

  • This recipe can be halved to make one loaf.
  • Combine yeast and warm water in a small bowl without stirring, set aside.
  • Sir together hot water, sugar and salt in a mixing bowl until dissolved. Add first 3 cups of flour and mix.
  • Pour oil and yeast into bowl. Add remaining 3 cups of flour and mix well. Cover the bowl with towel and set aside to rise for at least 45 minutes.
  • On a lightly floured surface, divide the dough into half. Shape into loaf and place on ungreased cookie sheet. Cover the dough with a towel and set aside to rise again for at least 45 minutes.
  • Bake in a 375 degree oven for 23 minutes.
