This is a recipe I adapted from a salad a friend brought to a pot luck we had one summer. I tweaked it a little bit and now I am requested to bring this to every get together. Very simple and inexpensive to make.

16 ounces tri-colored rotini pasta
20 medium olives, sliced
2 green onions, sliced
8 ounces shredded parmesan cheese
1/4 cup extra virgin olive oil
2 cups of your favorite caesar salad dressing

Steps:

  • Cook pasta according to package directions.
  • Drain and rinse pasta under cold water until cold throughout. Toss pasta with
  • olive oil making sure to coat well. Believe it or not it prevents the pasta from
  • absorbing all of the dressing, thus becoming dry.
  • Add the rest of the ingredients and toss with dressing.
  • I like to garnish the top with more sliced green onions.
  • Add grilled chicken breast and this salad goes from a side dish to an entree.

Who can resist this colorful pasta salad: Red, yellow, and green bell pepper shapes, grated carrots, and Romanesco florets tossed with creamy Hidden Valley® Original Ranch® Light Dressing make a delicious meal the kids will love.

½ pound whole wheat wagon wheel pasta
½ pound whole wheat spiral pasta
1 large carrot, grated
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 large head Romanesco broccoli (the "alien" veggie), trimmed and cut into florets
¼ cup sliced black olives
1 cup Hidden Valley® Original Ranch® Light Dressing

Steps:

  • Prepare pasta according to package directions.
  • While the pasta is cooking, grate the carrot and cut the bell peppers into various sized stars and half-moons (crescents).
  • During the last 3 minutes of cooking the pasta, add the Romanesco broccoli and cook together.
  • Rinse the pasta and Romanesco broccoli mixture under cool water to prevent further cooking.
  • Combine the pasta and Romanesco broccoli mixture, grated carrot, bell pepper shapes and olives.
  • Add the Hidden Valley® Original Ranch® Light to the pasta and veggies and mix until well combined.
  • Chill for at least 2 hours before serving.

  • Cook the pasta al dente (firm to the bite) in a pot of boiling water with teaspoon of salt. Drain orzo, transfer it to a large bowl, and immediately toss it, while it’s hot, with the oil (6 tablespoons), balsamic (6 tablespoons), sun-dried tomatoes (2/3 cup), olives (2/3 cup) and garlic (5 teaspoons). Set pasta aside to cool for 20-30 minutes before proceeding to step 2. Or cover and store in the fridge for up to 24 hours, and bring to room temperature before proceeding.
  • Once the pasta comes to room temperature, toss it with the rest of the ingredients: pine nuts (1 cup), radicchio (2 cups), arugula (1 1/2 cups), basil (1 cup) and parmesan (1 cup). Season with salt and pepper to taste. Serve at room temperature.
  • This pasta salad will keep for several days in the fridge but it’s at its best the day you make it, when the basil is bright green and the lettuces are crisp.
