GLUTEN FREE BREAD-MAKER WHOLEMEAL BREAD (WITH OATS)



Gluten Free Bread-Maker Wholemeal Bread (with Oats) image

Perfect gluten free bread made in a bread maker. This loaf uses a carefully-developed blend of wholegrain and starch flours. Soft and light for sandwiches. Perfect for toast. Stays fresh and soft for several days. Makes 1 large loaf. Optional Dairy Free.

200 g Gluten Free Alchemist Rice Free Flour Blend B
20 g additional tapioca starch flour
140 g gluten free oat flour
18 g milled flax seed
35 g ground psyllium husk (grind finely in a blender (not 'psyllium powder'))
8 g fine sea salt
24 g milk powder/coconut milk powder (omit if using liquid milk in place of water (below))
5 g INSTANT Easy Bake fast action yeast
3 large eggs
30 g sunflower or olive oil (= 2 tbsp)
24 g honey or maple syrup (= 1 tbsp)
5 g lemon juice (= 1 tsp)
325 g hand-warm water (or milk (dairy or DF))

Steps:

  • Accurately weigh and mix together all the dry ingredients (except the yeast) and set aside. TIP : weigh into an airtight container and shake vigorously.
  • Put the pot/sachet of yeast next to the mixed dry ingredients so that it is not forgotten.
  • Weigh all the wet ingredients into a large bowl and whisk through to combine with a hand whisk.
  • Prepare the bread-maker, making sure the paddle is in place.
  • Transfer the wet ingredients to the bread-maker. (scrape the sides of the mixing bowl with a spatula to make sure all ingredients are fully transferred).
  • Add the yeast to the dry ingredients and give a quick mix through.
  • Add the dry ingredients to the bread-maker bowl on top of the wet ingredients.
  • Set the bread-maker to GF setting (I use 'medium crust') and press 'start'. (See NOTES re optional removing of paddle part-way through cycle).
  • Enjoy a cup of tea and read a magazine while your bread bakes, enjoying the smell of freshly yeast-baked loaf.
  • Once baked, remove from the bread-maker and carefully slide/jiggle out sideways to avoid squashing the top. Cool on a wire rack.
  • Carefully remove the paddle (if stuck inside) once cool.

This makes two loaves of long baguette type French bread that has wonderful flavor and is so easy to make!

3 1/2 cups bread flour
1 teaspoon salt
1 (1/4 ounce) package active dry yeast
1 1/4 cups warm water

Steps:

  • Place ingredients in bread machine according to manufacturers directions.
  • Start machine on dough setting.
  • When dough cycle is complete, remove dough with floured hands and cut in half on floured surface.
  • Take each half of dough and roll to make a loaf about 12 inches long in the shape of French bread.
  • Place on greased baking sheet and cover with a towel.
  • Let rise until doubled, about 1 hour.
  • Preheat oven to 450°.
  • Bake for 15 to 20 minutes or until golden brown, turning pan around once halfway during baking.
  • Remove baked loaves to wire racks to cool.

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

This recipe comes from Fleishmann's Yeast and is absolutely the best french bread recipe I have found. The texture is wonderful and it tastes and looks great. I always get rave reviews when I make this.

3/4 cup water
1/2 teaspoon salt
2 1/4 cups bread flour
2 tablespoons parmesan cheese
1/2 teaspoon garlic powder
1 1/2 teaspoons active dry yeast
cornmeal
vegetable oil
1 large egg white
1 tablespoon water
sesame seeds

Steps:

  • Add 3/4 cup water, salt, flour, parmesan cheese, garlic powder and yeast to bread machine pan in order suggested by manufacturer.
  • Select dough/manual cycle.
  • When cycle is complete, remove dough from machine to a lightly floured surface.
  • Roll dough into a 15x10 inch rectangle.
  • Beginning at long end, roll up tightly as for jelly roll.
  • Pinch seams and ends to seal.
  • Taper ends by gently rolling back and forth.
  • Place loaf, seam side down on a greased baking sheet sprinkled with cornmeal.
  • Lightly brush loaf with oil.
  • Cover and let rise in warm draft-free place until almost double in size, 10 to 15 minutes.
  • With a sharp knife, make 3 or 4 diagonal cuts about 1/4 inch deep across the top of loaf.
  • Lightly beat egg white and 1 tablespoon water; brush some of egg white mixture over top of loaf.
  • Bake at 375 for 20 minutes.
  • Brush again with remaining egg white mixture and sprinkle with sesame seeds.
  • Bake 5 to 10 minutes more or until done- bread should sound hollow when tapped.
  • Remove the bread from the baking sheet and cool on a wire rack.

1 1/4 cups water (lukewarm)
2 1/2 cups white bread flour
1/2 cup wheat bread flour
2 1/4 teaspoons sugar
1/8 teaspoon salt
1 1/2 tablespoons butter
2 teaspoons fast rise yeast or 3 teaspoons active dry yeast

Steps:

  • Combine according to your manufacturer's directions.
  • Success Hints: To develop the crisp crust that French Bread is known for, use your French cycle.
  • If your machine doesn't have a French cycle, simply start your machine and let it go through the first knead, then stop and restart it from the beginning again.
  • This gives the bread extra kneading time and results in a crisp crust.
  • Because of the distinctive chewy French crust, it is recommended that this bread is served within 24 hours to avoid toughness.
  • This recipe can be made using the regular, rapid and delayed time bake cycles.

Number Of Ingredients 10

5 to 5-1/4 cups all-purpose flour
2 cups stone-ground whole wheat flour
2 packages (1/4 ounce each) active dry yeast
2-1/2 cups water
1 tablespoon sugar
1 tablespoon salt
1 tablespoon butter
Yellow cornmeal
1 large egg white
1 tablespoon water

Steps:

  • Combine the flours. In a large bowl, combine 3 cups flour mixture and the yeast. Set aside. Heat water, sugar, salt and butter to 115°-120°. Add to flour and yeast. Beat on low speed for 30 seconds; increase speed to medium and beat 3 minutes longer. Stir in enough remaining flour to make a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place dough in a greased bowl, turning once to grease the top. Cover and allow to rise in a warm place until doubled, about 1 hour. , Punch dough down; divide in half and let rest 10 minutes. Roll each half into a 15x12-in. rectangle. Roll up jelly-roll style, starting with the long side. Pinch seal and turn ends under to form a smooth loaf. Sprinkle 2 baking sheets with cornmeal and place each loaf, seam side down, on a greased baking sheet. Make slashes every 2-1/2 in. in the top of each loaf. Cover and let rise until doubled, about 1 hour. , Beat egg white and water; brush some over loaves. Refrigerate remaining mixture. Bake at 375° for 20 minutes. Brush again with egg white mixture and bake 15-20 minutes longer or until golden brown. Remove pans to wire racks to cool.
