Orange Poppy Seed Dressing image

This light, refreshing dressing is yummy over spinach and other types of salad greens, notes Sue Dannahower of Fort Pierce, Florida. The sweet-tart combination of honey, mustard, vinegar and citrus also accompanies fresh fruit nicely.

Number Of Ingredients 8

4 teaspoons cornstarch
6 tablespoons cold water
1-1/3 cups orange juice
1/4 cup white vinegar
4 teaspoons honey Dijon mustard
4 teaspoons honey
1-1/2 teaspoons poppy seeds
1/2 teaspoon salt

Steps:

  • In a small saucepan, combine cornstarch and cold water until smooth. Stir in the orange juice, vinegar, mustard and honey. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in poppy seeds and salt. Cover and refrigerate until chilled.

2/3 cup safflower oil or 2/3 cup corn oil
1/4 cup lime juice
2 tablespoons orange juice
2 tablespoons orange rind, grated
2 tablespoons honey
2 tablespoons onions, minced
1 tablespoon poppy seed
salt and pepper

Steps:

  • Place all ingredients in a screw-top jar.
  • Shake vigorously.
  • Chill until serving.
  • This dressing complements any green salad, but the addition of some small chunks of cantelope, honeydew, or star fruit to your greens will enhance the orange-honey flavor of the dressing.

I always get rave reviews when I serve this simple salad with a zesty poppy seed dressing! I often don't use the full amount of dressing, as I prefer less.

6 slices bacon
⅓ cup apple cider vinegar
¾ cup white sugar
½ red onion, coarsely chopped
½ teaspoon dry mustard powder
¼ teaspoon salt
½ cup vegetable oil
1 teaspoon poppy seeds
10 cups torn romaine lettuce leaves
1 (10 ounce) can mandarin orange segments, drained
¼ cup toasted slivered almonds

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Place vinegar, sugar, red onion, mustard powder, and salt into the bowl of a blender. Cover, and puree on high until smooth. Reduce blender speed to medium-low; slowly pour in the vegetable oil and blend until incorporated and the dressing is creamy. Stir in the poppy seeds and set aside.
  • To serve, toss the romaine in a large bowl with the crumbled bacon, Mandarin oranges, and enough dressing to moisten. Place onto salad plates and sprinkle with toasted almonds.

  • Finely shred 1 1/2 teaspoons peel from orange. Peel, seed, and section orange, reserving juice. In a food processor or blender combine the shredded orange peel, sections, and juice; the vinegar; sugar; mustard; onion; and pepper. Cover and process or blend until well mixed.
  • With the processor or blender running, slowly add oil in a steady stream until mixture is thickened. Transfer to a small bowl. Stir in poppy seeds. Store in the refrigerator for up to 1 week. Stir well before using.
