CHEWY ORANGE CHOCOLATE CHIP OATMEAL COOKIES
Chewy orange chocolate chip oatmeal cookies that are healthy and easy. Gluten free, low sugar, dairy free, and made with coconut oil instead of butter. The perfect delicious healthy dessert, snack, or breakfast cookie.

Steps:
- Preheat oven to 350F and line baking sheet with parchment paper.
- In a large mixing bowl, whisk egg.
- Mix in maple syrup, coconut oil, and vanilla extract.
- Add in rolled oats, almond flour, cinnamon, salt and baking powder. Mix with a spatula until fully combined.
- Gently fold in chocolate chips, walnuts, and orange zest.
- Using scooper or hands form 12 - 15 cookie patties and evenly space them across the lined baking tray.
- Bake for 15 - 17 minutes, until golden brown.
- Let cool & enjoy!

- Heat oven to 180C/160C fan/gas 4. Cream the butter and sugar together until well blended and smooth. Gradually beat in the banana, vanilla extract and egg. Add the zest. Mix well with a wooden spoon until thoroughly blended.
- In a large bowl, mix the flour, salt, baking powder, oats, coconut, walnuts and sultanas or chocolate chips. Stir the dry ingredients into the wet and mix thoroughly until a thick dough is formed. Line a baking sheet with parchment. Drop heaped tbsps onto the sheet, leaving a 5cm (2in) space around each one, and press down lightly. Bake for 15-20 mins until lightly browned. Cool.

- Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Beat butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Stir egg white and applesauce into butter mixture until just combined into a dough. Add orange juice with pulp and orange zest to the dough; stir.

- Sift flour, baking powder and salt into and set aside. Cream butter, sugars, orange zest and vanilla extract together in a large bowl until light and fluffy.
- Add eggs one at a time beating well after adding each one. Add dry ingredients and stir until combined. Stir in chocolate chips and nuts and mix until well blended.

- Note: The recipe initially calls for 2 1/2 cups flour, but with the added note if you want them more softer and rounder cookie to add 1/4 cup flour. I add the 1/4 cup making it 2 3/4 cups total.
- Cream shortening, butter, sugars, then eggs and vanilla and almond extracts.
- Blend dry ingredients and add to mixture.
- Stir in Chocolate chips.
