1 egg
⅓ cup 100% maple syrup
¼ cup coconut oil (melted)
1 tsp vanilla extract
1 cup rolled oats
½ cup almond flour (packed)
¼ tsp ground cinnamon
¼ tsp salt
½ tsp baking powder
¼ cup walnuts (roughly chopped)
⅓ cup chocolate chips
Zest of 1 large orange (about 1 - 2 tsp)

Steps:

  • Preheat oven to 350F and line baking sheet with parchment paper.
  • In a large mixing bowl, whisk egg.
  • Mix in maple syrup, coconut oil, and vanilla extract.
  • Add in rolled oats, almond flour, cinnamon, salt and baking powder. Mix with a spatula until fully combined.
  • Gently fold in chocolate chips, walnuts, and orange zest.
  • Using scooper or hands form 12 - 15 cookie patties and evenly space them across the lined baking tray.
  • Bake for 15 - 17 minutes, until golden brown.
  • Let cool & enjoy!

100g butter at room temperature
1 egg
50g mashed ripe banana
1 tsp vanilla extract
100g light soft brown sugar
½ tsp grated orange zest
100g wholemeal flour
¼ tsp salt
1 tsp baking powder
100g rolled oats
25g desiccated coconut
50g chopped walnut
75g sultana or dark chocolate chips

Steps:

  • Heat oven to 180C/160C fan/gas 4. Cream the butter and sugar together until well blended and smooth. Gradually beat in the banana, vanilla extract and egg. Add the zest. Mix well with a wooden spoon until thoroughly blended.
  • In a large bowl, mix the flour, salt, baking powder, oats, coconut, walnuts and sultanas or chocolate chips. Stir the dry ingredients into the wet and mix thoroughly until a thick dough is formed. Line a baking sheet with parchment. Drop heaped tbsps onto the sheet, leaving a 5cm (2in) space around each one, and press down lightly. Bake for 15-20 mins until lightly browned. Cool.

¼ cup brown sugar
1 egg white, beaten until foamy
¼ cup unsweetened applesauce
1 large naval orange, zested and juiced
1 cup whole wheat flour
1 cup quick-cooking oats
¾ cup chopped walnuts
½ teaspoon baking soda
½ teaspoon cream of tartar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Beat butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Stir egg white and applesauce into butter mixture until just combined into a dough. Add orange juice with pulp and orange zest to the dough; stir.
  • Mix flour, oats, walnuts, baking soda, cream of tartar, and cinnamon in a separate bowl; fold into the dough until evenly incorporated.
  • Drop by heaping tablespoon onto prepared baking sheets.

2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
¾ cup unsalted butter
½ cup white sugar
1 cup packed brown sugar
1 tablespoon orange zest
1 teaspoon vanilla extract
2 eggs
1 ½ cups semisweet chocolate chips
1 ½ cups chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • Sift flour, baking powder and salt into and set aside. Cream butter, sugars, orange zest and vanilla extract together in a large bowl until light and fluffy.
  • Add eggs one at a time beating well after adding each one. Add dry ingredients and stir until combined. Stir in chocolate chips and nuts and mix until well blended.
  • Drop dough by slightly rounded tablespoonfuls 2 inches apart on cookie sheets. Flatten slightly. Bake cookies for 15 or 16 minutes or until golden. Cool on the cookie sheets.

The 4 kids seemed to think they were ok and preferred other items while the adults cleaned up the tray. I used Bittersweet chocolate.

1 cup old fashioned oats
1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup packed brown sugar
3/8 cup unsalted butter, melted and cooled
1 large egg
1/2 teaspoon vanilla
3/4 teaspoon finely grated fresh orange zest
1/2 cup semi-sweet chocolate chips (not more than 60% cacao) or 1/2 cup chopped bittersweet chocolate (not more than 60% cacao)

Steps:

  • Put oven rack in middle position and preheat oven to 375°F Butter a large baking sheet.
  • Stir together oats, flour, baking soda, and salt in a bowl to combine.
  • Whisk together brown sugar, butter, egg, vanilla, and zest in another bowl.
  • Stir egg mixture into flour mixture until just combined. Stir in chocolate chips.
  • Make 12 mounds of batter 1 1/2 inches apart on baking sheet. Bake until cookies are golden and edges are crisp, about 15 minutes.
  • Transfer cookies to a rack to cool.

1 egg (or substitute)
40 g mashed ripe bananas (about 1/2 a banana)
1 teaspoon vanilla extract
100 g light brown sugar
1 1/2 teaspoons orange rind (grated)
125 g whole wheat flour
1/4 teaspoon salt
1 teaspoon baking powder
120 g rolled oats
20 g desiccated coconut
60 g chopped walnuts
75 g sultanas (OR 90 g dark chocolate chips)

Steps:

  • Preheat oven to 180 degrees.
  • Cream butter and egg together until well blended and smooth. Gradually beat in the banana, vanilla extract, and brown sugar. Add the orange zest. Mix well with a wooden spoon until all the ingredients are thoroughly blended.
  • In a large bowl mix the flour, slat, baking powder, oats, coconut, walnuts, and sultanas or chocolate chips. Use a wooden spoon to combine dry ingredients until they are evenly mixed. Stir the dry ingredients into the wet ingredients and mix thoroughly until there is no sign of dryness.
  • Grease or line a baking sheet. Drop heaping tablespoonsful of the dough onto the greased baking sheet, leaving 5cm (2 inches) space around each one, and press down to lightly flatten. Bake for 20 minutes or until lightly browned. Cool on a wire rack.

We have stayed in this retreat center called Shrine Mont where people come for rest, devotion, and fellowship. A couple of things set these cookies apart: butter and shortening ensure a thick cookie, soft in the middle, with a touch of almond extract.

1/2 cup shortening
1/2 cup butter
3/4 cup white sugar
3/4 cup packed brown sugar
1 teaspoon vanilla
1/2 teaspoon almond extract
1 teaspoon baking soda
2 eggs
2 3/4 cups bleached all purpose flour (see note below)
1 teaspoon salt
2 cups chocolate chips (I use Ghirardelli brand)

Steps:

  • Note: The recipe initially calls for 2 1/2 cups flour, but with the added note if you want them more softer and rounder cookie to add 1/4 cup flour. I add the 1/4 cup making it 2 3/4 cups total.
  • Cream shortening, butter, sugars, then eggs and vanilla and almond extracts.
  • Blend dry ingredients and add to mixture.
  • Stir in Chocolate chips.
  • Drop by large tablespoons (I use cookie scoop) onto ungreased cookie sheet, leaving 2-inches room in between to allow cookies to spread. I press down lightly with a measuring cup to bake more uniform cookies).
  • Bake at 375° for 10 minutes until lightly brown.
  • Makes 2-3 dozen cookies depending on size.
