- Add boiling water to gelatin mixes; stir 2 min. until completely dissolved. Pour into 9x5-inch loaf pan sprayed lightly with cooking spray. Refrigerate 1 hour or until firm.
- Unmold gelatin; cut into 1/2-inch cubes. Line loaf pan with foil. Combine ice cream and gelatin cubes; spoon into prepared pan.
- Freeze 4 hours or until firm. Unmold.

ORANGE SHERBET ICE CREAM CAKE WITH SUGAR COOKIES AND LEMON WHIPPED CREAM FROSTING
This dessert is like an orange creamsicle in cake form, with a sugar cookie crust and a lemony whipped cream frosting.

- Butter a 9-inch springform pan and line the bottom with a parchment paper circle.
- Cover the bottom of the prepared pan with the sugar cookies. Spread the marshmallow creme on top of the cookies. Scoop the sherbet and frozen yogurt onto the marshmallow layer, packing it in tightly and alternating the scoops to create a marbled or checkerboard effect. Spread with an offset spatula to make a smooth top. Cover with plastic wrap and freeze until firm, 2 to 2 1/2 hours.
- Unmold the cake by running a knife around the edge of it, then unhinge the springform and remove. Invert the cake onto a sheet of plastic wrap and remove the bottom of the pan and the parchment. Place a plate on the bottom and invert once more.
- Add the heavy cream, lemon curd, confectioners' sugar and vanilla to a large bowl and whip with an electric mixer until soft peaks form. (This makes enough frosting to cover the top and sides of the cake with additional to pipe decorations if desired.)
- Frost the top and sides of the cake with the lemon whipped cream frosting and sprinkle with the almonds. If the cake begins to get too soft, put it back into the freezer for a few minutes.
- Freeze another 1 1/2 to 2 hours or up to overnight. Before serving, let the cake sit at room temperature for about 20 minutes.

- Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Sift flour and 3/4 cup sugar together twice; set aside. , Add the cream of tartar, salt and almond and vanilla extracts to egg whites; beat on medium speed until soft peaks form. Gradually add remaining sugar, about 2 tablespoons at a time, beating on high until stiff glossy peaks form and sugar is dissolved. Gradually fold in flour mixture, about 1/2 cup at a time., Gently spoon half of batter into an ungreased 10-in. tube pan. To the remaining batter, stir in the orange zest, orange extract and, if desired, food colorings. Gently spoon orange batter over white batter. Cut through both layers with a knife to swirl the orange and remove air pockets., Bake on the lowest oven rack at 375° for 30-35 minutes or until lightly browned and entire top appears dry. Immediately invert pan; cool completely, about 1 hour., Run a knife around side and center tube of pan. Remove cake to a serving plate.

ORANGE DREAM CAKE
I got this recipe from Allrecipes.com It was submitted by "Pauline" I made it for dessert on Christmas day. It is very good! The cake is nice and moist without having an overpowering orange taste. You can use any kind of frosting/icing on this cake or even sprinkle powdered sugar on it. I used a can of Cream Cheese frosting on mine. I made this cake in a bundt cake pan. I do not know how it will turn out in a 9x13x2 inch cake pan or (2) 9 inch round cake pans. Prep and bake times are approximate.

- Preheat oven to 350F (or 175C) Grease and flour a bundt cake pan and set aside.
- Dump cake mix, jello powder and Dream Whip powder in a large mixing bowl.
- Stir together until well mixed.
- Add oil, milk and eggs and mix for 3 minutes with an electric mixer.
- Pour into prepared bundt cake pan.
- Bake for 30-35 minutes.
- Insert a toothpick in the center of the cake.
- When the toothpick comes out clean, the cake is done.
- Remove the cake from the oven and allow to cool for 10 minutes.
- Place a dinner or cake plate, bottom side up, on top of the cake pan.
- Turn over and lightly shake the pan to help loosen the cake from it.
- You might be able to feel the cake loosen from the pan.
- While cake is still warm (but not hot) spread a light layer of the frosting on the side and top of the cake.
- This will result in a nice glaze effect on the cake.
- Or you can allow the cake to completely cool and frost it like you would normally frost a cake.

- 1. Bake cake as directed in a 9 x 13" pan. Let cake cool. Pour over cake. Cover and refrigerate for 4 hours.
- 2. Poke holes in cooled cake. Mix 1 package orange gelatin dessert with 1 cup boiling water and 1 cup cold water.
- 3. Mix pudding mix with cold milk the other package of orange gelatin dessert and vanilla. Beat by hand with a whisk until thickened. Fold in the whipped topping. Frost the cake with the pudding mixture.
- 4. For a layered cake: Make the cake batter as directed, then batter pour evenly into 3 round 9" cake pans. Bake cakes as directed and let cool.
- 5. Then, make the orange gelatin as directed on the package : you'll let the gelatin set up instead of pouring it into the cake. Use your round cake pans, or deep cookie sheet with edges.
- 6. When you pour the liquid gelatin mixture into the pans, it will need to be refrigerated for around 4 hours.
- 7. Make the pudding mixture according to the original recipe. Finally, layer in this order: cake, gelatin pudding mixture. Repeat once more for a 6-layered cake.

As for the crust, use whole vanilla wafers; They're less work, and crunchier than if you used crumbs. There are many ways to riff on this cake. You could try a different sherbet flavor, use frozen yogurt instead of vanilla ice cream, or trade the vanilla wafers for gingersnaps, shortbread or any other crumbly cookie. - Uncover the orange sherbet and vanilla ice cream and let sit at room temperature while you prepare the crust. Cover the bottom of an 8-by-2-inch springform pan with a layer of vanilla wafers (see Tip). Break up cookies to fill any big holes.
- Using a soup spoon, scoop small, alternating spoonfuls of the orange sherbet and vanilla ice cream and place them randomly on top of the cookies (imprecision is good here). Gently press the ice cream down with the back of the spoon and tap the pan on the counter to fill in the pan and remove any air bubbles. Continue until you've used all the ice cream, then spread the top into an even layer. To create decorative swoops on top, press down into the cake with the back of the spoon and move it up and out in circular motions to create swirls and peaks all over.
- Cover the cake with plastic wrap and freeze until firm, at least 2 hours or up to 1 week. To serve, quickly rub the side and bottom of the pan with a warm, moistened kitchen towel to loosen. Unmold the springform and transfer the cake to a serving plate.
ORANGE CREAM CAKE I
