This is one of my favorite recipes for soda bread. It's versatile-you can do endless sweet or savory variations. I serve it sliced alongside assorted spreads and cheeses. -Theresa Vujosevic, Hamburg, New Jersey For a savory Irish bread: Omit Sugar and Raisin and replace with 1 medium onion, 5 gloves of garlic (chopped and sauteed until translucent). Let mixture cool and add into dough mixture prior to adding wet ingredients. Another Savory Choice: Again omit sugar and rais

Number Of Ingredients 9

1 tablespoon olive oil
1 medium onion, chopped
5 garlic cloves, minced
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/4 cup cold butter, cubed
1 large egg, room temperature
1-1/2 cups buttermilk

Steps:

  • Preheat oven to 425°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until light golden brown, 3-5 minutes. Add garlic; cook and stir 30 seconds longer. Cool., In a large bowl, whisk flour, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Stir in cooled onion mixture; make a well in center. In a small bowl, whisk egg and buttermilk; pour into well. Using a wooden spoon, mix dough until too stiff to stir. Turn onto a lightly floured surface; knead gently 10 times. Shape into a round loaf., Transfer to a large greased cast-iron skillet or baking sheet. Using a sharp knife, cut a shallow "X" on the top of loaf. Bake until golden brown, 35-40 minutes., Remove from pan to a wire rack; serve warm.

Number Of Ingredients 10

4 cups all-purpose flour
2 tablespoons dried parsley flakes
1 tablespoon dried minced onion
2 teaspoons garlic powder
1-1/2 teaspoons dill weed
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground mustard
1-3/4 cups buttermilk
1 cup shredded sharp cheddar cheese

Steps:

  • In a large bowl, whisk the first 8 ingredients. Add buttermilk and cheese; stir just until moistened. Turn onto a lightly floured surface; knead gently 6-8 times or just until dough comes together. Shape dough into a 6-in. round loaf. Using a sharp knife, score surface with 1-in.-deep cuts in a crisscross pattern. Place in a greased 5-qt. slow cooker., Cook, covered, on high 1-1/2 to 2 hours or until a thermometer reads 190°-200°., Preheat broiler. Remove bread; place on a baking sheet. Broil 6-8 in. from heat 2-3 minutes or until golden brown. Remove to a wire rack to cool completely.

I begged this recipe from my co-worker when he 'accidentally' mentioned he had a great soda bread recipe. It was perfect timing, because St. Patrick's Day was only days away!

4 cups bread flour, plus more for dusting
1 ½ teaspoons salt
1 tablespoon baking powder
6 tablespoons butter, softened
1 ¼ cups buttermilk
2 tablespoons confectioners' sugar
¾ cup finely chopped onion
¾ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together bread flour, salt, and baking powder until thoroughly combined. Beat in the butter, buttermilk, and confectioners' sugar to make a dough; gently mix in the onion and Cheddar cheese. Divide dough in half, and shape each half into a ball. Place the loaves onto the prepared baking sheet, and gently flatten to about 2 inches thick. Dust each loaf with flour.
  • Bake on a preheated oven until browned, about 30 minutes. Cool on racks for a few minutes; serve warm.

1 tablespoon butter
1 medium onion, yellow skinned, chopped
3 cloves garlic, crushed
1 teaspoon sugar
1/2 teaspoon ground thyme, poultry seasoning may be substituted
A few grinds black pepper
1 (12-inch) loaf crusty bread, split lengthwise
2 handfuls grated Parmigiano

Steps:

  • Melt butter in a small pan over moderate heat. Add onions and garlic and season with sugar, thyme and pepper. Cook 15 minutes, stirring occasionally, until onions are golden in color and translucent.
  • Place the split bread on a baking sheet and broil until golden. Spread half the onions and garlic on each half of bread in a thin layer. Sprinkle each side of loaf with a handful of cheese and return to broiler for 30 seconds to bubble cheese. Serve with a hearty, soup-er supper

A delicious dinner bread that goes perfectly with many dinners: Garlic-onion bread. It has a yeasty flavor and goes great with spaghetti.

3/4 cup warm water, 95 F to 110 F
2 1/4 teaspoons or 1 package (1/4-ounce) active dry yeast
1/2 cup milk, room temperature
1 tablespoon sugar
1 teaspoon salt
1 tablespoon soft butter
1/2 tablespoon garlic powder
1 medium yellow onion, finely chopped
4 cups bread flour, about

Steps:

  • In​ a large bowl, mix water and yeast. Add milk, sugar, salt, butter, garlic powder, and onion. Stir. Add 3 cups flour and mix well. Add in enough flour to make a dough that follows the spoon around the bowl. Turn dough out onto lightly floured surface and knead for 4 minutes, adding more flour as needed until the dough is soft and smooth to the touch. Place dough in medium greased bowl. Turn dough over in bowl so that the top is also lightly greased. Cover with clean cloth and let rise in warm, draft-free place for 1 hour or until doubled in size.
  • Punch down dough. Turn dough out onto ​a lightly floured board and knead for 4 minutes or until the bubbles are out of the bread. Shape dough into the loaf. Place loaf in greased bread pan. Cover and let rise in warm, draft-free place for 45 minutes or until doubled in size.
  • Bake bread at 350 F for 45 minutes or until the bread sounds hollow when the top is tapped. Remove bread from pan and let cool on ​a rack.
  • Serve bread warm with homemade whipped butter or, for extra garlic flavor, with garlic chive butter . The bread can also be sliced, topped with a favorite hard cheese, such as grated mozzarella cheese, and toasted in a toaster oven until cheese melts and the bread is lightly brown.

Number Of Ingredients 12

2 tablespoons olive oil
2 medium onions, cut in half and sliced thinly
1 garlic clove, finely minced
1 bay leaf
3 1/4 cups unbleached white flour
1 tablespoon sugar
1 1/2 teaspoons baking soda
1 1/2 teaspoons cream of tartar
3/4 teaspoon salt
2 tablespoons caraway seeds, lightly crushed
3/4 cup buttermilk
1/2 cup plain yogurt (full fat, NOT non-fat)

Steps:

  • Preheat oven to 350 degrees.
  • In a large non-stick skillet over medium heat saute the onions, garlic and bay leaf for about 25 minutes. The onions will turn a deep golden color.
  • Cool the onion mixture slightly, discard the bay leaf, and puree the onions in a blender.
  • Position an oven rack in the center of the oven. Line a baking sheet or cookie sheet with parchment paper.
  • Sift the flour, sugar, baking soda, cream of tartar and salt into a large mixing bowl. Stir in the caraway seeds.
  • Make a well in the center of the flour mixture. Whisk the buttermilk and yogurt in a small bowl. Add the buttermilk, yogurt and onions to the flour. Stir together only until mixed. DO NOT overstir.
  • Turn dough out on a lightly floured board and knead until dough is smooth, about 2 minutes.
  • Shape the dough into a 6-inch diameter by 2 1/2-inch-high round.
  • Place dough on the baking sheet. If desired, using a sharp knife, cut a deep cross design in the top center of dough.
  • Dust the top of the dough with a light dusting of flour.
  • Bake the bread for approximately 55 minutes or until light brown and crusty on the outside. The loaf is baked thoroughly when you hear a "hollow" sound when tapped on top of the loaf.
  • Transfer to wire rack to cool.
