One-Pot Chili Mac and Cheese image

This delicious chili mac and cheese with ground beef, diced tomatoes, rich tomato sauce, chili beans and spices is cooked all in one pot--including the macaroni!

1 tablespoon extra virgin olive oil
1 medium sweet onion, diced small
3 cloves garlic, minced
1 pound lean ground beef
2 cups low-sodium chicken broth
2 cups Ragu® Old World Style® Traditional Pasta Sauce
1 (10 ounce) can diced tomatoes with green chile peppers
1 (16 ounce) can mild chili beans, undrained
1 teaspoon chili powder
1 teaspoon cumin
salt and ground black pepper to taste
1 ½ cups uncooked elbow macaroni
¾ cup shredded Cheddar cheese
¼ cup chopped fresh parsley

Steps:

  • Heat olive oil in a large Dutch oven or pot over medium-high heat. Add onion, garlic, and beef. Stirring frequently, cook until meat is browned and crumbly, about 3 minutes. Drain excess fat.
  • Stir in chicken broth, Ragu® sauce, diced tomatoes with mild green chilies, beans, chili powder, and cumin. Season with salt and pepper, to taste. Bring to a boil and stir in pasta; cover, reduce heat to a simmer and cook until pasta is al dente, about 14 minutes.
  • Remove from heat. Stir in the cheese and parsley. Serve immediately, garnished with additional cheese and parsley, if desired.

An easy 30 minute hearty soup where even the uncooked macaroni is tossed in the pot!

Number Of Ingredients 14

2 tablespoons olive oil
1 pound ground beef - I used lean . (7% fat)
1 large onion (chopped)
4 cloves garlic (chopped)
3 tablespoons tomato paste
1 14 oz can of kidney beans
1 14 oz can of diced tomatoes (undrained)
1 tablespoon ground cumin
2 tablespoons chili powder
6 cups beef stock
8 oz elbow macaroni
1 teaspoon salt
1/3 teaspoon pepper
2 cups grated cheddar

Steps:

  • Add olive oil to large soup pot or dutch oven.
  • Add ground beef and cook until done. Stirring and breaking up meat with a spoon.
  • Add onion and garlic.
  • Cook for 3-4 minutes until onions soften.
  • Add tomato paste, beans, diced tomatoes and bring to a simmer.
  • Add cumin and chili powder, stir.
  • Add beef stock and bring to a simmer.
  • Add uncooked macaroni, salt and pepper to taste (don't forget to taste for seasoning...more cumin, salt and pepper? )
  • Continue to cook for an additional 8-10 minutes until macaroni is tender.
  • Serve with grated cheese on top!

  • Once the ground beef is browned, add in the beef broth, tomatoes, kidney beans, chili powder, cumin, salt and pepper. Bring to a boil, then allow to simmer. Mix in the pasta, and cook for an additional 10-15 minutes, or until the pasta is completely cooked. Mix in the cheese.
