CAMPFIRE BANANAS AT HOME

Bananas, ripe and peeled
Tin foil
Milk chocolate chips
Mini marshmallows
Chopped pistachios
Rainbow sprinkles
Crumbled Oreos
Sugary cold cereal

Steps:

  • Place a rack in the upper third of the oven and heat oven to 400 degrees F.
  • Slice bananas down the center vertically. Wrap individually in foil. Top each banana with chocolate chips and marshmallow. Seal the foil and place on a rimmed baking sheet. Bake for 6 to 8 minutes or until chocolate and marshmallow has melted and the bananas are softened slightly.
  • Remove from the oven, carefully open the foil and top with whatever toppings you'd like. Enjoy and Happy Summer!

This was a recipe from my old Girl Scouting days. A very easy recipe for all ages that needs little adult supervision. Great for sleep-overs and backyard camping trips.

6 large bananas, unpeeled, stems removed
2 cups semisweet chocolate chips
1 (10.5 ounce) package miniature marshmallows

Steps:

  • Preheat the grill for high heat.
  • Spray 4 sheets of aluminum foil, large enough to wrap bananas, with cooking spray.
  • Slice the peel of the banana from stem to bottom, while slicing the banana inside lengthwise. The bananas can be cut into slices instead if you like, (while still in the peel) for easier handling later.
  • Carefully open the banana just wide enough to place the chocolate chips and marshmallows inside the peel with the banana. Stuff with as much of the chocolate chips and marshmallows as desired.
  • Wrap the bananas with the aluminum foil and place on the grill or directly in the coals of a fire. Leave in long enough to melt the chips and the marshmallows, about 5 minutes. Unwrap bananas, open the peels wide, and eat with a spoon.

4 firm bananas, peeled and halved lengthwise
¼ cup maple syrup
1 tablespoon ground cinnamon
1 (1 inch) piece fresh ginger, grated
1 ½ teaspoons ground nutmeg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.
  • Arrange banana halves in the prepared baking dish. Drizzle maple syrup over bananas and top with cinnamon, ginger, and nutmeg. Cover dish with aluminum foil.
  • Bake in the preheated oven until heated through, 10 to 15 minutes.

2 bananas
Juice of 1 lime
1 tablespoon dark rum
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 tablespoon dark brown sugar
1 tablespoon butter (optional)

Steps:

  • Preheat the oven to 400 degrees. Peel the bananas and slice in half lengthwise. Lay the pieces into a buttered 9-by-13-by-2-inch ovenproof dish. Pour the lime juice and rum evenly over the bananas. Sprinkle on the cinnamon, nutmeg, and brown sugar. Dot on the butter, if using, and bake for 10 to 15 minutes. Serve hot, topped with a tablespoon of fresh cream or ice cream.

2 tablespoons melted butter
3 tablespoons brown sugar, packed
1 teaspoon lemon juice

Steps:

  • Preheat the oven to 425 degrees F.
  • Cut off the ends of the bananas and place the unpeeled bananas on an ungreased cookie sheet. Bake for about 15 minutes, or until their skins burst and turn black. Discard the skins (once cooled a bit) and cut the bananas lengthwise.
  • Mix the melted butter, brown sugar and lemon and then drizzle it over the cooked bananas. Enjoy!

1 cup cream, fresh and whipped
2 tablespoons Amarula cream liqueur
8 ounces dark baking chocolate
8 ounces walnuts, chopped
1 cup honey

Steps:

  • Heat up the bar-b-que grill.
  • Whip the cream until stiff peaks are formed.
  • Fold the Amarula Liqueur into the mixture.
  • Cover and refrigerate until needed.
  • Over medium coals place the bananas, still in peel, onto the grill.
  • Heat bananas until the peel turns black.
  • Remove the bananas from the grill and split the skin of the banana open.
  • In a saucepan, melt the chocolate over medium heat.
  • Once melted, add the walnuts and honey stirring constantly.
  • Pour chocolate sauce over bananas and top with whipped cream mixture.
