ALL IN ONE PAN CAKE (AKA WACKY CAKE)

All in One Pan Cake (Aka Wacky Cake) image

I thought this recipe looked familiar when I first saw it and I was right. My Mom used to make this cake for every birthday celebrated in the house but she called it wacky cake. What makes it wacky? There are no eggs or dairy in it.

Ingredients

1 1/4 cups all-purpose flour
1/3 cup unsweetened cocoa
1 cup sugar
1/2 teaspoon salt
3/4 teaspoon baking soda
1 cup water
1/3 cup canola oil
1 teaspoon vanilla extract
1 teaspoon cider vinegar

Steps:

In an 8x8 inch square baking pan combine the flour, cocoa, sugar, salt and baking soda. Mix until it is completely light brown.
When it is mixed, make 4 dents in the mixture with a spoon, 2 large dents and 2 small dents.
Pour the water into one of the large dents.
Pour the oil into the other large dent.
Pour vanilla into one of the small dents.
Pour vinegar into the other small dent.
Stir until well moistened.
When batter is well mixed, smooth it out and spread into place with a spatula.
Bake at 325 degrees for 30 minutes.
Cool the cake in the pan for 30 minutes before cutting it into squares.

Ingredients

1 1/2 cups flour
1 cup sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons vegetable oil
1 tablespoon white vinegar
1 teaspoon vanilla
1 cup cold water

Steps:

Preheat the oven to 350 degrees F.
Sift the flour, sugar, cocoa, baking soda, and salt into an ungreased 8X8 glass baking dish.
Make 3 depressions in the dry ingredients.
Pour oil into one, vinegar into one, and vanilla into one.
Pour water over all and mix thoroughly with a fork to moisten all dry ingredients.
Bake for 30 minutes, or until a toothpick comes out clean.
sprinkle with powdered sugar or ice.

2 ½ cups all-purpose flour
1 ½ cups white sugar
½ cup cocoa powder
2 teaspoons baking soda
½ teaspoon salt
⅔ cup vegetable oil
2 tablespoons cider vinegar
1 tablespoon vanilla extract
2 cups water
⅓ cup white sugar
½ teaspoon ground cinnamon

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Stir flour, 1 1/2 cups sugar, cocoa powder, baking soda, and salt together in a 8x12-inch baking pan. Make 3 wells in the mixture. Pour oil, vinegar, and vanilla extract each into their own well. Pour water into the pan. Stir batter with a fork until well combined.
Combine 1/3 cup sugar and cinnamon in a bowl. Sprinkle 3/4 of the mixture over the batter.
Bake in the preheated oven until a toothpick inserted in the center comes out clean, 30 to 40 minutes. Sprinkle the remaining cinnamon sugar over the hot cake. Let cool before slicing, at least 15 minutes.

This is a recipe my mother made when we were children. It was so moist it never needed frosting. Mom would use a paper doily to make a pretty powdered sugar design on the top. I have found a couple online, but they just were not as good.

Ingredients

1 1/2 cups flour
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons baking soda
3 tablespoons baking cocoa
6 tablespoons vegetable oil
1 tablespoon white vinegar
1 teaspoon vanilla
1 cup cold water

Steps:

Preheat oven to 350 degrees.
Thoroughly mix dry ingredients in an ungreased 8 x 11" pan. Make 3 wells in the dry mixture and pour the vegetable oil in one, the vanilla in a different one and the vinegar in the last one. Pour the cold water over all and stir with fork until well blended.
Bake for 30 minutes. Cake is done when center springs back when lightly touched. Do not test with a toothpick or knife.
