Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Combine carrots, applesauce, oil, and vanilla. Add eggs and sugar and mix together. In another bowl, mix the rest of the dry ingredients. Stir dry ingredients into applesauce mixture until blended. Do not over mix. Divide mixture into 2 greased loaf pans. Bake for 55 minutes or until done.

Steps:
- Sift together dry ingredients. Set aside.
- Combine eggs, sugar, oil, milk, and vanilla in a large bowl.
- Add flour mixture; mix gently.
- Fold in apples, nuts and coconut.
- Spoon into lightly greased 9X5 inch pan. Sprinkle top with cinnamon and sugar which have been mixed together.
- Bake 60 minutes at 350 degrees.
- Cool in pan on wire rack 10 minutes. Remove from pan and cool completely on rack.
- Mix by hand to avoid overmixing and to insure a tender moist loaf.

- In a large bowl, combine the flour, baking soda, baking powder, 1 teaspoon cinnamon and salt. In a small bowl, whisk the eggs, 1-1/2 cups sugar and oil. Stir in apples; let stand for 5 minutes. Stir into dry ingredients just until moistened. Fold in pecans., Pour into two greased and floured 8x4-in. loaf pans. Combine remaining sugar and cinnamon; sprinkle over batter. Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

- In a large bowl, cream the butter and 1 cup sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk. Stir in apple and nuts. , Pour into a greased and floured 9x5-in. loaf pan. Combine cinnamon and remaining sugar; sprinkle over batter. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to wire rack to cool completely.

- Preheat oven to 300 degrees F (150 degrees C). Lightly grease two 9x5 inch loaf pans.
- In a large bowl, stir together oil, applesauce, eggs, sugar and vanilla extract. In a separate bowl, sift together flour cinnamon, baking soda and salt. Gradually stir flour mixture into wet ingredients, mixing just until combined. Fold in apples and walnuts. Pour batter into prepared pans.
- Bake in preheated oven for 70 minutes, until a knife inserted in the center of a loaf comes out clean.

I thought I would share my Apple bread recipe. This recipe has been handed down. It is my sisters recipe that I tweaked. It tastes more like a cake due to its moistness. I have brought this to school bake sales. I have given it to teachers, and neighbors. I hope you enjoy this recipe as much as my friends and family do.

Steps:
- 1. Pre heat oven 350 degree's butter and flour 1 bread pan
- 2. Combine chopped apples with granulated sugar in bowl and set aside
- 3. Beat egg with melted butter on low speed. Make sure butter isn't hot before adding egg,or you'll cook the egg. Combine together butter/egg mixture with apple sugar mixture, and mix well .
- 4. Combine flour, cinnamon, allspice,nutmeg, and baking soda in a separate bowl.
- 5. Add flour mixture to apple mixture and stir to combine add vanilla stir in. Add nuts last until all ingredients are combined.
- 6. Bake at 350 degree's for 1 hour or until tooth pick comes put clean. Cool and turn on to plate or rack. Enjoy! I usually make 2 loaves repeating the steps. I have found doubling the recipe and putting in to 2 pans doesn't work as well due to the heavy apples sinking to the bottom of the bowl.
SIMPLE BANANA-APPLE BREAD
This is a wonderful, tasty, and super easy recipe to follow. You can omit the apple and it is a simple banana bread recipe also. My family loves it.

BANANA APPLE NUT BREAD
Nice change from the usual. Note on frozen bananas: we toss overripe bananas directly into the freezer, skin on. They will keep for a few months, however the skins will turn black and they will be mushy when thawed. This is also good when subbing dried apricots for the apple.

- Preheat oven to 350°F (185°C).
- Butter and flour a loaf pan.
- Scrape bananas from their skins, mash and pour lemon juice over.
- Cream butter and sugars til light, add eggs and vanilla, beat until fluffy.
- Fold in sifted dry ingredients alternately with milk.
- Fold in bananas, apples and nuts.
- Mixture should be pretty thick (should "plop" by spoonfuls, not pour) if it seems too thin, sift flour by teaspoonfuls over mixture and stir.
- Spoon into pan, thump bottom of pan on bench a few times to settle, smooth top and bake for 50 minutes. Top should be golden brown and sound hollow when lightly thumped.

- Preheat oven to 350.
- Grease and flour a 9 x 5-inch loaf pan or spray it with cooking spray.
- In large mixing bowl, combine flour, sugar, baking powder, salt and cinnamon.
- Add beaten eggs, milk and margarine; mix well.
- Stir in cheese, apples and pecans.
- Mixture will be fairly thick; spoon into loaf pan.

AWESOME APPLE BREAD
This bread is so moist and flavorful that my kids even eat the ends, which for most quick breads I usually have to throw away. At Christmas, I make the mini loaves and give as gifts to my neighbors. The oil can be replaced with 1 cup of unsweetened applesauce. Still flavorful but not quite as moist. If possible, don't skip the walnuts, they really add to it.
