CHA CHA CHICKEN
I don't know where I got this recipe from, but recipes are only guidelines for me, so I am not sure if this is the real recipe or my variation of the original. I didn't even know what to call it! I love this dish, and so does my entire family. I serve with Spanish rice or ranch beans and a salad.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Arrange chicken in the bottom of a 2-quart casserole dish. Squeeze lime juice over the chicken and season with salt and pepper.
- Mix salsa and garlic together in a bowl. Spoon 1/4 cup of the salsa mixture over each chicken breast; top with more lime juice.
- Cook chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, 50 to 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

CHICKEN CHAAT
Steps:
- Heat the oil in a frying pan over high heat. When it begins to bubble, add the chopped onions.
- Stir the onion around in the oil for a couple of minutes until soft and translucent.
- Add the garlic and ginger paste and give it all another good stir.
- Spoon in the curry powder, chilli powder and chaat masala followed by the tomato puree.
- This should sizzle when it hits the pan. When it does, add half of the base curry sauce.
- Allow this to bubble for a minute or so, only stirring if the sauce begins to stick to the pan.
- Add the chicken pieces and the rest of the base sauce.
- To finish, stir in the cucumber, capsicum, chickpeas and tomato wedges. Add salt to taste and sprinke with the garam masala.
CHICKEN CHAAT RECIPE
Chicken Chaat is a simple Indian side dish made of chicken, vegetables and spices which come together to create a flavourful dish.

Steps:
- Heat half of the oil in a large frying pan over a high heat.
- Fry the chicken pieces until browned on all sides. Remove from the pan and set aside.
- Lower the heat and add the remainder of the oil to the frying pan.
- Gently fry the onion and green chillies until softened and translucent, which would take about 5 minutes.
- Add the cooked chicken to the onions, along with the tamarind paste, garam masala and chaat masala.
- Stir fry for another 3 minutes or until the chicken is cooked through.
- Switch off the heat, add the tomato and cucumber, then season to taste.
- Garnish with cilantro and serve immediately. Enjoy!

Steps:
- Wash and cut the chicken into one inch pieces.
- Heat oil in a pan.
- Add garlic and salt.
- Fry the former till it is light brown.
- Add chicken pieces.
- fry for 5-6 minutes, stirring constantly.
- Add the masala powders.
- Stir for another 3-4 minutes.
- Check to see if the chicken is tender.
- Remove from heat.
- Add lemon juice.
- Garnish with chopped corriander leaves.
- Serve hot.
CHAR SIU CHICKEN
This dish is so easy to make, but so delicious! Due to the marinating time, you do need to plan ahead to make this, but the wait is worth it. I serve this with a skinny Hawaiian slaw and there are never leftovers. Whether I roast it or grill it, this recipe never fails.

Steps:
- Whisk brown sugar, soy sauce, hoisin sauce, honey, garlic, sriracha sauce, sherry, food coloring, sesame oil, Chinese five-spice powder, and liquid smoke together in a bowl; pour into a resealable plastic bag. Add chicken thighs, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 24 to 48 hours.
- Preheat oven to 350 degrees F (175 degrees C). Line a roasting pan with aluminum foil and place a roasting rack in the bottom of the pan.
- Remove chicken from marinade and place on the rack in the prepared roasting pan.
- Pour marinade into a saucepan; bring to a boil, reduce heat to low, and simmer for 3 to 5 minutes. Remove from heat.
- Bake chicken in the preheated oven, turning once and basting occasionally with marinade, until the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
