i found this recipe a long time ago while reading about the types of food served at the olympic villages. not a bad cookie to give a teenager for breakfast!

Steps:
- cream butter and sugar together.
- blend in egg and vanilla.
- add oats,soda,salt, and flour.
- mix well.
- stir in raisins, coconut.
- drop onto ungreased cookie sheets and top each cookie with 2 or 3 m&m's.
- bake at 350 for 8-10 minutes.

OUTSTANDING OATMEAL COOKIE (THE OLYMPIC COOKIE)
This was published in a magazine in the early 1980's. It was a popular dessert on the menu at the Olympic Training Center in Colorado Springs. It's a good source of fiber and a great source of quick energy. It does pack some calories (97 per cookie), so be on guard.

Steps:
- Beat together butter and sugar until light and fluffy; blend in egg and vanilla.
- Add combined oats, flour, soda and salt; mix well.
- Stir in remaining ingredients. Drop dough by rounded teaspoonfuls onto cookie sheets covered with parchment paper about 3 inches apart.
- Press 2 to 3 additional M&M candies into each cookie, if desired.
- Bake at 350*F for 8 to 10 minutes or until golden brown. Cool on cookie sheet about 3 minutes; remove cookies to wire rack to cool thoroughly.
- Makes about 4 dozen 2 1/2-inch cookies.

- Heat the oven to 350°F. In a large bowl, stir the brown sugar, butter, baking soda, cinnamon, vanilla, salt and eggs with a wooden spoon until well mixed. Stir in the oats, flour and raisins until mixed.
- For each cookie, scoop a rounded tablespoonful of dough, using a tableware spoon, and push it onto an ungreased cookie sheet with another spoon or rubber spatula, placing cookies 2 inches apart.
- Bake 9 to 11 minutes or until light brown. Remove cookies from cookie sheets to a cooling rack, using a turner. Cool cookie sheets 10 minutes between batches.

CLASSIC OATMEAL-RAISIN COOKIES

- Heat oven to 350 degrees. Butter two large cookie sheets, or line them with parchment paper or reusable silicone liners.
- Using an electric mixer, beat butter in a large bowl until creamy. Add brown and granulated sugars, then beat until fluffy, about 2 minutes. Beat in eggs, one at a time, until fully incorporated. Then, beat in vanilla extract.
- In a separate bowl, use a wooden spoon or spatula to mix together the flour, salt, baking soda, cinnamon, nutmeg and cardamom. Set mixer on low speed, and beat flour mixture into the butter mixture. Stir in oats and raisins.
- Spoon out dough by large tablespoonfuls onto prepared cookie sheets, leaving at least 2 inches between each cookie.
- Bake until cookie edges turn golden brown, about 9 to 13 minutes. Centers will still be quite soft, but they will firm up as the cookies cool. Cool completely on a wire rack. Store in an airtight container at room temperature.

- In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
- Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot water and set aside.
- In large bowl, sift flour with soda, salt and spices. Blend in rolled oats, sugar and nuts. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture. Pour into dry ingredients, stirring until well mixed. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets.
- Bake 10 to 13 minutes in the preheated oven, until the edges are golden.
