OLD FASHIONED HAM BALLS

Number Of Ingredients 11

Meatball Ingredients:
2 pounds leftover ham
2 pounds ground pork
4 eggs
1 1/4 cups milk
1 1/2 cups panko breadcrumbs (gluten free panko will work fine as well)
Glaze Ingredients:
3 1/2 cups brown sugar
1 1/2 cups water
1 cup apple cider vinegar
2 teaspoons ground mustard powder

Steps:

  • Preheat the oven to 350 degrees. Lightly grease (2) 9x13 baking dishes with oil and set aside. Use the coarse setting on your meat grinder to grind the leftover ham. If you don't have a meat grinder, you can use a food processor to pulse until it is chopped like hamburger meat.
  • Combine all the meatball ingredients in a large bowl and mix with your hands until combined. Roll into 1 1/2" - 2" meatballs. I use a medium size cookie scoop to scoop them all the same size before smoothing them with my hands. Arrange the meatballs in the baking pans and set aside.
  • Whisk together all the glaze ingredients in a medium size saucepan over medium high heat. Bring to a boil, whisking until the sugar has dissolved. Reduce the heat to medium and simmer for 4-5 minutes, until the sauce has thickened.
  • Pour the glaze over the ham balls, dividing it between the two pans. Bake the ham balls, uncovered, for 75-85 minutes, until the ham balls have browned and the sauce has reduced to a syrupy consistency. Enjoy!
  • FREEZER MEAL: Let the meatballs cool and then transfer to a freezer safe Ziploc or an airtight container. Pour all remaining glaze over them and press out any air. Let thaw in the refrigerator before reheating covered in the oven, on the stove-top or in the microwave.

3 large eggs
1 cup milk
1-1/4 cups quick-cooking oats
2-1/2 pounds ground fully cooked ham
SAUCE:
1 cup plus 2 tablespoons packed brown sugar
3 tablespoons cornstarch
1/2 teaspoon ground cloves, optional
1-3/4 cups pineapple juice
1/2 cup light corn syrup
3 tablespoons cider vinegar
4-1/2 teaspoons Dijon mustard

Steps:

  • In a bowl, combine the eggs, milk, oats and ham; mix well. Shape into 1-1/2-in. balls. Place in a greased 15x10x1-in. baking pan. , In a saucepan, combine the brown sugar, cornstarch and cloves if desired. Stir in pineapple juice, corn syrup, vinegar and mustard until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes. Pour over ham balls. Bake, uncovered, at 350° for 35-40 minutes or until browned.

2 lbs ham loaf mix
2 eggs slightly beaten
1/2 cup milk
1 cup soft bread crumbs
3/4 cup brown sugar
1 Tablespoon dry mustard
3/4 cup cider vinegar
3/4 cup hot water

Steps:

  • In a medium bowl soak bread in milk for about 5 minutes.
  • Stir in eggs.
  • Add meat and mix together.
  • Shape into balls and place in a greased 9 x 13 inch pan.
  • In a bowl mix together glaze ingredients.
  • Pour sauce over ham balls.
  • Bake at 350 degrees for 2 hours.
  • Baste occasionally with sauce.

10.5 ounces tomato soup
3/4 cup brown sugar

1/3 cup apple cider vinegar

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine ground beef, ground pork, ground ham, beaten eggs, graham cracker crumbs and milk until mixed.
  • Roll into 1 1/2 inch balls. Arrange in a baking dish. (2) 13 x 9 inch baking dishes work perfectly.
  • In a bowl, mix tomato soup, brown sugar, dry mustard and apple cider vinegar.
  • Spoon or pour over the ham ball.
  • Bake, uncovered, for 1 hour.
  • Serve with the brown sugar glazed spooned over top.

1 bone-in smoked ham (about 10 pounds), fat trimmed to a 1/4-inch thickness
2 cups black or red currant jelly or jam
3 rosemary sprigs
2 teaspoons fresh lemon juice
Pinch of salt

Steps:

  • Preheat oven to 325 degrees. Wrap ham with parchment-lined foil. Transfer to a rimmed baking sheet. Bake for 1 hour.
  • Meanwhile, bring jelly and rosemary to a simmer in a small saucepan over medium-high heat. Cook until thick and syrupy, about 3 minutes. Stir in lemon juice and salt.
  • Transfer ham to a cutting board, and unwrap. Score fat in a diamond pattern with lines less than 1/2 inch apart using a sharp knife. Return ham to baking sheet. Raise oven temperature to 375 degrees. Brush ham with currant glaze. Bake for 30 minutes. Brush again with glaze, and bake for 10 minutes more. Remove from oven, and brush again with glaze. Rewarm remaining glaze over low heat until pourable and saucelike. Slice ham, and serve with sauce.

I LOVE these, been making them for about 15 years now. A nice change from regular meatballs. Everyone really likes them. I usually serve these as an appy or even a side dish for parties, but I wouldn't see why it couldn't be made as a main dish, too! :)

1 beaten egg
1 slice bread, torn into tiny pieces
1/3 cup snipped dried tart cherry
1/4 cup finely chopped green onion
1/4 teaspoon pepper
1/2 lb fully cooked ground ham
1/2 lb lean ground beef
2/3 cup red currant jelly
1 -2 tablespoon mustard

Steps:

  • In bowl, combine first 5 ingredients.
  • Add next 2 ingredients and mix with hands.
  • Shape into 1" balls.
  • Bake in 13x9 pan and bake at 350º for 18-20 minutes.
  • In small saucepan, melt jelly and mustard.
  • Place meatballs into dish, pour sauce over, stir lightly to coat.
  • Toothpick if desired for appetizers.
  • Serve hot.

a 7-to-8 pound half (shank end) of a fully cooked cured ham
whole cloves for studding the ham
1/3 cup red-currant jelly
1 1/2 tablespoons Dijon-style mustard

Steps:

  • If the ham comes with the skin still attached, remove most of it with a sharp knife, leaving a collar of skin around the shank bone and a layer of fat. Trim the fat, leaving a layer about 1/3 inch thick, score the layer remaining into diamonds, and stud the center of each diamond with a clove. Bake the ham on a rack in a roasting pan in a preheated 350°F. oven for 55 minutes.
  • In a small saucepan heat the jelly over moderate heat, stirring, until it is melted and smooth, remove the pan from the heat, and stir in the mustard. Spoon the glaze over the ham, spreading it evenly, and bake the ham for 30 to 35 minutes more, or until the glaze is brown and bubbly. Transfer the ham to a platter and let it stand for 15 minutes before carving. If planning to make the ham, spinach, and pasta gratin (page 117), reserve 1 pound of the carved ham, covered and chilled.

  • *Note: To make ahead, cover and chill uncooked ham balls for up to 12 hours. Prepare glaze, cover and chill up to 12 hours. Uncover and bake as directed. Ham balls and glaze can also be frozen separately.

This ruby-red glazed ham makes a spectacular focus for any feast. Find a local purveyor whose hams you like, and you'll never use a canned ham again.

1 smoked, precooked ham, bone in
2 pints red-currant jelly
1 bottle cabernet sauvignon or other good red wine
1/4 cup finely chopped parsley

Steps:

  • Heat oven to 300 degrees.
  • Put ham fat side up on a bed of aluminum foil in a pan just big enough to hold it. Place in oven for 2 1/2 hours.
  • Remove from oven, and peel off the outer layer of fat. Score top with a sharp knife at 3/4-inch intervals in a checkerboard pattern, about half an inch deep. Return ham to oven.
  • In a saucepan over medium heat, melt the jelly with the red wine and reduce until mixture is slightly syrupy, about 6 minutes. Baste ham lightly with the glaze every 10 minutes or so for 1 1/2 hours.
  • Let cool for 30 minutes; then decorate with a thin line of parsley along every third scored line.
