OLIVE DIP AKA MEXICAN CAVIAR
This recipe has evolved through the years,and finally it's been perfected. It is requested alot from my family to bring to family functions..Best served with "Frito Scoops."

Steps:
- 1. Using a large mixing bowl, open the cans of olives and drain well. Then slice each olive into about 4 pieces..do that with both cans of olives. Then open jar olives, drain and slice also, add to bowl.
- 2. Chop tomatoes, onions and garlic and add to same bowl. Mix well. Then add the olive oil, red wine vinegar, salt and pepper and mix again.
- 3. It is best to let this sit in the fridge, covered, overnight, stir every now and then to blend flavors. Serve with Frito Scoops. I have also used tortilla chips, but everyone seems to like the Scoops the best.
KALAMATA CAVIAR
Spread this fast, easy olive, cheese and nut mixture on slices of warm French bread. The combination of distinct flavors is magnificent!

- In a food processor, blend kalamata olives, feta cheese, pecans, garlic and olive oil. Adjust amount of olive oil as needed to attain a pesto-like consistency.

- Drain and rinse the beans and peas.
- Chop the pimentos.
- Chop the celery.
- Chop the onion.
- Chop the jalapeños.
- Add the corn.
- Mix together the above solids:.
- Then in a saucepan mix:
- olive oil.
- cider vinegar.
- sugar.
- Cook liquids until the sugar dissolves.
- Pour liquid over the solids - cover and put in refrigerator for at least one hour.
- Drain liquid and serve. Fritos scoops work great with the dip.

MEXICAN CAVIAR
This is a tasty make ahead appetizer that I truly enjoy. It can be made overnight or several hours in advance.

Steps:
- Combine all ingredients, except tomatoes (see notes) and chill overnight.
- My notes:
- Add the tomatoes right before serving to avoid making the dish too watery as they marinate overnight.
- I prefer a medium (to fine) chop to the ingredients.
- I would add jalapenos for heat.
- Serve with Corn Chips for scooping.
CAVIAR DIP
Steps:
- In the bowl of an electric mixer fitted with a paddle attachment, cream the cream cheese until smooth. With the mixer on medium speed, add the sour cream, lemon juice, dill, scallion, milk, salt, and pepper. With a rubber spatula, fold in 3/4 of the salmon roe. Spoon the dip into a bowl and garnish with the remaining salmon roe and sprigs of fresh dill.
- Serve with chips, toasts, or crackers.
OLIVE DIP

- Place all ingredients except the tomatoes and olive oil in a blender; blend until smooth. This may take a little while since the dip is pretty thick. Add a little more lemon juice to thin it out only slightly if you need to.
- Place in a flat serving dish and refrigerate for 1 hour.
- Then spread the tomato pieces on top,and drizzle with olive oil before serving.

- Mix mayonnaise and sour cream in medium bowl to blend.
- Add olives, onions, cilantro, lime juice, garlic and 1/4 tsp hot pepper sauce. Season with salt and pepper.
- Taste, adding more hop pepper sauce if desired.
- Cover with plastic wrap and refrigerate until well chilled, at least 1 and up to 8 hours.
- Serve dip with tortilla chips.
