OLD SAN FRANCISCO STEAKHOUSE'S FRENCH ONION SOUP

Old San Francisco Steakhouse's French Onion Soup image

After working at O.S.F and observing the management I doubt this chain will be around for much longer--too bad because the food is outstanding. Here is my biggest seller...

Provided by Grimms Restaurant T

Categories     Onions

Time 45m

Yield 1 gallon, 16 serving(s)

Number Of Ingredients 14

2 tablespoons clarified butter
2 large red onions, thinly sliced
6 large yellow onions, thinly sliced
2 quarts beef stock
2 quarts chicken stock
12 ounces dry sherry
1 1/2 tablespoons brown sugar
3 teaspoons ground black pepper
1 1/2-2 teaspoons fresh thyme leaves or 3/4 teaspoon dried thyme
2 tablespoons minced fresh parsley
paprika, to taste
1 teaspoon chopped scallion
sourdough croutons or toasted pieces French bread
thinly sliced swiss cheese

Steps:

  • Heat the butter in a large heavy pot over moderate heat and add the onions, separating the rings with a fork. Cover and sauté onions, stirring occasionally, for about 10 minutes. Raise the heat to medium high and cook, stirring often, until the onions are very soft and a deep golden brown, about 20 minutes more. Add beef stock, chicken stock, sherry, brown sugar, pepper, thyme, parsley, paprika and scallions. Simmer for 10 minutes, or longer, if desired. To serve, pour soup into warmed bowls, and top with croutons and Swiss cheese.
  • To clarify butter: Melt butter in a heavy pan over low heat. Skim off froth and carefully pour clear liquid into another container, being careful to leave the milky residue behind.
  • Recipe can be halved or doubled.
  • At the restaurant we served these in onion bowls -- or very large yellow onions with the root cut off and the insides mostly scraped out(this can be used in the soup) with an ice cream scoop. After toping them with croutons and cheese they were placed under the broiler until bubbling.

ALMOND CRUNCH CAKE

Almond Crunch Cake image

This is probably my favorite cake, frosted with whipped cream and almond brittle. The recipe is from Flavors, a San Antonio Junior League cookbook, and is served at their Bright Shawl Tearoom. I think Old San Francisco Steak House used to serve a similar crunch cake. Making the cake is not difficult but takes some time. In a pinch, you could use an angel food cake and put together as directed.

Time 2h30m

Yield 12 serving(s)

Number Of Ingredients 17

1 1/2 cups sifted flour
1 1/2 cups sugar, divided
8 eggs, separated
1/4 cup cold water
1 tablespoon lemon juice
1 teaspoon vanilla
1 teaspoon cream of tartar
1 teaspoon salt
1 1/2 cups sugar
1/4 teaspoon instant coffee
1/4 cup light corn syrup
1/4 cup hot water
1 tablespoon sifted baking soda
2 -2 1/2 cups heavy cream
2 tablespoons sugar
2 teaspoons vanilla
almonds, blanched, halved and toasted

Steps:

  • CAKE: Sift together flour and 3/4 c sugar.
  • Make a well in the center, add egg yolks, water, lemon juice, vanilla and beat until smooth.
  • Beat egg whites, cream of tartar and salt just until soft peaks form.
  • Add remaining sugar, 2 T at a time, continuing to beat until stiff.
  • Fold flour mixture gently into egg whites.
  • Pour batter into an ungreased 10-inch tube pan.
  • Cut carefully through the batter, going around tube 5 or 6 times with a knife to break air bubbles.
  • Bake at 350 for 50-55 minutes or until top springs back when lightly touched.
  • Invert pan 1 hour or until cool.
  • Remove cake and split into 4 equal layers.
  • ALMOND BRITTLE TOPPING: Combine sugar, coffee, syrup, and water in a saucepan, stirring well.
  • Cook to hard crack stage, 290 degrees, remove from heat and add soda.
  • Stir vigorously until mixture blends and pulls away from sides of pan.
  • Quickly pour into an ungreased shallow baking pan.
  • Let stand until cool.
  • Knock out of pan and crush candy with a rolling pin into small chunks.
  • Whip cream and fold in sugar and vanilla.
  • Spread half of cream between layers and remainder over top and sides.
  • Cover top and sides with candy, lightly pressing into cream.
  • Decorate with almonds.
  • Do not press candy and almonds into cream more than 6 hours before serving.
  • Refrigerate.

  • Martini Cocktail. View Recipe. The gin martini is the king of cocktails. And back in the day, it was the eponymous punch behind the staggering good time known as "the three-martini lunch."
  • Old Fashioned Cocktail. View Recipe. This was Don Draper's drink of choice, of course. It was a real oldie even in the 1950s. The original, 19th century version was simply water, sugar, bitters, and booze.
  • Chef John's Shrimp Cocktail. View Recipe. For our purposes, this is the only steakhouse appetizer that counts. As Chef John recalls: "Before I knew much about food or dining out, I knew that if they brought shrimp cocktails to the table as an appetizer, we were eating at a 'fancy' restaurant.
  • Bistecca alla Fiorentina (Tuscan Porterhouse) View Recipe. The motto of our fantasy steakhouse is "go big." But also, "keep it simple" -- where this steak recipe is concerned, anyway.
