APPLE PIE IN A BROWN PAPER BAG
This is the most incredible pie. Cooking it in the brown paper bag makes the filling soft and juicy and the top crunchy. I have made this recipe for over 25 years and everyone who has ever eaten it can't believe how wonderful it is! I was given this recipe by my best friend and I think she got it from her friend's grandmother. After so many years I decided it was time to share it with the world! Serve warm with vanilla ice cream. Reheats very well.

Steps:
- To make the bottom crust, stir the flour and white sugar together in a bowl until well-combined. Rub the unsalted butter into the flour until the mixture resembles coarse crumbs; sprinkle with cold water, a couple of tablespoons at a time, mixing the dough together lightly with a fork until it barely holds together.
- Form the dough into a ball and roll it out to a circle about 1/8-inch thick. Gently ease the dough into an 8-inch pie dish. Cut off any excess pastry with a knife. Finish the edge of the crust by gently pressing the tines of a fork into the dough all the way around the edge of the pie dish. Set the crust aside.
- To make the pie filling, stir the apples, brown sugar, 2 tablespoons of flour, the cinnamon, nutmeg, ginger, and lemon juice together in a large bowl; set aside.
- To make the topping, mix 1/2 cup of flour, 1/2 cup of softened butter, and the superfine sugar together in a bowl until you have a sticky, moist dough.
- To assemble the pie, cover the bottom of the pie crust with a light, even layer of graham cracker crumbs. Fill the pie with the apple mixture, piling it up in a mound shape. Pinch off pieces of the topping mixture, flatten them a little with your fingers, and dot them at random all over the top of the filling, covering as much of the filling as possible.
- Preheat oven to 425 degrees F (220 degrees C).
- Tear off 2 30-inch-long pieces of parchment paper and place them in a cross shape on a work surface. Place the filled pie in the center of the two pieces of parchment, bring the paper ends up over the pie and fold and staple the parchment paper over the pie to completely enclose and seal in the pie. The paper should not touch the top or sides of the pie. Place the parchment-wrapped pie on a baking sheet to catch any drips.
- Bake in the preheated oven for 1 hour. Don't peek inside the parchment paper while baking. Remove from the oven, carefully tear the parchment paper away from the pie, and let cool; serve warm. Store leftovers in refrigerator.

- Preheat oven to 425 degrees F (220 degrees C).
- In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
- Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

Steps:
- Arrange sliced apples in pie shell.
- In mixing bowl, combine sugars, salt and spices.
- Blend in cream.
- Pour over apples and dot top with butter.
- Bake in a preheated 450 oven for for 15 minutes.
- Remove pie, and slip it into a brown paper grocery sack.
- Fold over the ends of the sack to close.
- Slide pie back into oven and reduce heat to 350.
- Bake 20 minutes.
- Remove pie from oven, remove sack, and bake pie an additional 10-15 minutes til crust is golden brown and apples are bubbling hot.
- *The paper sack keeps the open-faced apple pie from drying out.
- Cool til warm, serve with a scoop of homemade vanilla ice cream! :).

- Preheat oven to 425 degrees F (220 degrees C).
- Combine 1/2 cup sugar, 2 tablespoons flour, and cinnamon. Pour over apples in crust. Sprinkle lemon juice on top.
- Cut 1/2 cup sugar, 1/2 cup flour, and 1/2 cup butter or margarine together, and top pie with the mixture.
- Take two 15 inch pieces of parchment paper and enclose pie; fold edges up 3 times. Place on a baking sheet.
- Bake in preheated oven for 1 hour. Remove from oven, split parchment open and cool pie on wire rack. DO NOT open parchment covering while baking! Serve warm, or at room temperature.

GRANNY'S DUTCH APPLE PIE
This orginal recipe came from my grandmother's cookbook, a 1941 New American Cookbook. I have tweaked the recipe just a bit, but still it retains the old-fashioned goodness. I just made this recipe over Thanksgiving for company and it was a complete success! I've never really tasted another apple pie quite like this one, mmmm...

- 1. Preheat oven to 375 degrees. Place apple slices in a large bowl.
- 2. Mix flour, sugar, spices, and lemon juice together and sprinkle over apple slices. Using a spatula or large spoon, mix together. (I just use my hands).
- 3. Pour apple mixture into pie crust and dot with butter. Sprinkle crumb topping over apples (directions to follow).
- 4. Place pie plate onto a foil-lined cookie sheet and bake for about 40 to 50 minutes or until topping is browned and apples are cooked and bubbly. Best serveed warm with ice cream.
- 5. TOPPING: In a medium bowl, mix flour, salt, cinnamon and sugars together with a fork. Knead in butter until mixture is crumbly and the consistancy of wet sand. If too wet, you may add in a little more flour (about a tablespoon at a time) until consistancy is right. If mixture is too dry, you can add a little more butter.
- 6. This topping recipe was actually told to me by my mother and grandmother. I was never given precise measurements, so I tweaked it the best I could and this is what I came up with. This topping tastes wonderful and works well for apple crisp, sweet potato casserole, or most any dessert that requires this type of topping.

- Preheat the oven to 350 degrees F.
- In a large bowl, mix together flour, brown sugar, butter and oats with a pastry blender. Set aside one cup of mixture for crumb topping.
- Press the remaining crumb mixture into an ungreased 9-inch pie pan; set aside.
- In a sauce pan, combine sugar, cornstarch and water over medium-high heat.
- Bring to a boil and let boil for 2 minutes, whisking constantly (it will thicken up quickly so it's important to keep stirring the whole time!).
- Remove from heat and fold in apples, vanilla, cinnamon, nutmeg, ginger, and allspice.
- Pour apple mixture into prepared crust and sprinkle seet-aside crumb topping on top.
- Bake for 40-50 minutes, or until topping is golden brown and apples are tender.
- Let cool before serving.
