HOMEMADE CREAM SODA

Steps:

• Heat the sugar and the water in a saucepan until the sugar is completely dissolved.
• Remove the syrup from the heat, and stir in the vanilla extract and the lemon juice. Let the syrup cool and then store in the refrigerator.
• Mix 1 1/2 to 2 ounces of the syrup into 8 ounces of soda water. Or, you can make a big batch of cream soda at once, using the same ratio of syrup to soda water.

OLD-FASHIONED ICE CREAM SODAS

Steps:

• Place 3 tablespoons chocolate syrup in each of four 16-oz. glasses. Add 1/4 cup milk and 1 cup carbonated water to each; stir until foamy. Add two scoops of ice cream to each glass. Top with whipped cream if desired.

Steps:

• In a 12 oz. glass, stir together chocolate syrup and cream.
• Add ice and then fill will chilled club soda; stir.
• Garnish with whipped cream & cherry; serve immediately.

• Chocolate Orange: 1 tbl. frozen orange juice concentrate.
• Chocolate Toffee: 1/4 c Heath toffee bits (let stand several hours to develop flavor).
• Mocha: add 1 teaspoons instant coffee granules.
• Chocolate Strawberry: 1 cup Strawberry Syrup.
• Chocolate Hazelnut: 7 tbl. hazelnut flavored syrup.
• (Use 3 tbl of any of the above in place of plain chocolate syrup in your soda).

Steps:

• Pour 1/2 cup club soda into each of four tall glasses. Add 1/2 cup ice cream to each glass. Fill glasses with soda. Serve immediately.

FANTASTIC OLD FASHIONED ICE CREAM SODA

Steps:

• Pour the milk into one tall 16-ounce glass.
• Stir in syrup.
• Add in ice cream and enough soda water or selzer to fill almost to top of glass.
• Top with whipped cream if desired.
• Serve with a long spoon and a big straw.
