This is a tried-and-true, old-fashioned coconut cream pie. Took many years of searching and baking to find the right one and this is it! Enjoy!

1 cup sweetened flaked coconut
3 cups half-and-half
2 eggs, beaten
¾ cup white sugar
½ cup all-purpose flour
¼ teaspoon salt
1 teaspoon vanilla extract
1 (9 inch) pie shell, baked
1 cup frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread the coconut on a baking sheet and bake it, stirring occasionally, until golden brown, about 5 minutes.
  • In a medium saucepan, combine the half-and-half, eggs, sugar, flour and salt and mix well. Bring to a boil over low heat, stirring constantly. Cook, stirring constantly, for 2 minutes more. Remove the pan from the heat, and stir in 3/4 cup of the toasted coconut and the vanilla extract. Reserve the remaining coconut to top the pie.
  • Pour the filling into the pie shell and chill until firm, about 4 hours.
  • Top with whipped topping and with the reserved coconut.

This Old Fashioned Coconut Custard Pie is similar to what you would imagine a coconut crème brulee might be. The flaky pie crust is filled with loads of shredded coconut set in a baked custard.

1 Pie crust shell, prepared
3 Large eggs, beaten
½ cup granulated sugar
1/8 teaspoon salt
1 teaspoon coconut extract
1 cup milk (I used non0fat)
1 cup coconut milk, mixed
2 cups shredded coconut, sweetened
Whipped cream for garnish

Steps:

  • Preheat oven to 450° F.
  • Prepare a pastry pie shell, roll about and place in pie plate. Trim and flute the edges.
  • To prepare the filling start by whisking the eggs, gradually adding in sugar and salt. Whisk until smooth and frothy.
  • Add coconut extract, milk and coconut milk. Be sure to mix the coconut milk before adding to the eggs.
  • Last, add the shredded coconut and whisk into the filling. Pour batter into prepared pie shell.
  • Place pie plate on lower rack in your oven. Bake at 450°F for 20 minutes.
  • After 20 minutes, turn the oven down to 350° F and cover the crust with foil to prevent burning. Bake for another 20-25 minutes.
  • Pie will still be slightly jiggly on top, but stick a toothpick around the pie to ensure the filling has baked. If there is any bubbling or liquid on top, dab it lightly with a paper towel.
  • Allow pie to cool completely before serving. I suggest to refrigerate and serve cold. Serve with whipped cream or a raspberry sauce.

½ cup butter
1 ½ cups white sugar
2 tablespoons all-purpose flour
2 eggs
1 cup milk
1 cup flaked coconut
1 teaspoon vanilla extract
1 recipe pastry for a 9 inch single crust pie
1 tablespoon flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, beat together butter or margarine, sugar, and eggs with an electric mixer on low speed. Blend in flour. Mix in 1/2 cup of milk at a time. Add 1 cup coconut and vanilla, and mix well.
  • Pour filling into unbaked pie shell. Sprinkle top with additional coconut before baking, just enough to lightly cover the top. Bake for 40 to 50 minutes, or until set.

2 c half and half
1 Tbsp cornstarch
3 large eggs
1/2 c sugar
1/2 stick butter, melted
pinch sea salt
1 tsp vanilla
1-1/4 c coconut, flaked or shredded
9 inch deep dish pie crust

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Mix eggs and sugar well with hand mixer.
  • 3. Dissolve cornstarch in 1/4 cup of the half and half; add back to remaining half and half, and stir until well combined.
  • 4. Add half and half mixture slowly to the egg/sugar mix, while continuing to beat on low speed; add salt. Stir in the melted butter by hand. Add vanilla and coconut.
  • 5. Pour into pie crust; bake for 45-60 minutes, depending on your oven.
  • 6. Cover edges of pie crust with foil if browning too quickly. Top of pie should be a golden color.

1 cup sugar
1/4 cup all-purpose flour
Dash salt
3 large egg yolks
2 cups whole milk
1-1/2 teaspoons vanilla extract
1-1/4 cups sweetened shredded coconut, divided
1 pie shell (9 inches), baked
MERINGUE:
3 large egg whites
6 tablespoons sugar

Steps:

  • In a large saucepan, combine the sugar, flour and salt. Combine egg yolks and milk; stir into dry ingredients until smooth. Cook and stir over medium heat until mixture is thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat; stir in vanilla and 1 cup coconut. Pour hot filling into pie shell. , For meringue, beat egg whites in a bowl until soft peaks form. Gradually beat in sugar until mixture forms stiff glossy peaks and sugar is dissolved. Spread meringue over hot filling. Sprinkle with remaining coconut. , Bake at 350° for 12-15 minutes or until golden. Cool. Store in the refrigerator.

2 tablespoons all-purpose flour
Pinch of salt
2 eggs, room temperature (I used Jumbos)
1 cup whole milk, warmed to lukewarm
1/2 stick (1/4 c.) butter, melted and cooled to lukewarm
3/4 teaspoon vanilla extract
1 1/2 cups sweetened flaked coconut, plus 1/4 cup for top
1 9-inch unbaked pastry pie crust (I used a frozen Pet-Ritz, thawed)

Steps:

  • Place a baking sheet in the oven and preheat to 350° F. Prep pie crust for a one crust baked pie as directed on package. Set aside. In a large mixing bowl, whisk together the sugar, flour, and salt. Whisk in eggs until well incorporated. Whisk in milk; then melted butter and vanilla. Stir in 1 1/2 cups coconut. Pour mixture into the unbaked pie shell. Sprinkle pie with enough coconut to lightly cover the top (I used about 1/4 cup). Place pie on the hot baking sheet. Bake for 45-50 minutes, or until center of pie doesn't jiggle when you lightly shake the pan. Cool pie on a wire rack to room temperature, then refrigerate for at least 2 hours before serving. Top with whipped cream, if desired.

Dough for single-crust pie
4 large eggs
2-1/2 cups whole milk
1/2 cup sugar
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 teaspoon almond extract
1/2 teaspoon salt

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 400°., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 10-15 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack., In a large bowl, whisk eggs. Whisk in remaining ingredients until blended. Pour into crust.
