This Old Fashioned Bread Pudding is incredibly easy to pull together! You will love the rich, creamy texture of the pudding and the crunchy sweet topping! With or without a drizzle of hard sauce, this is a phenomenal dessert and a super easy way to use up older bread!

5 cups day old bread (cut into ½" cubes (I have use raisin bread and hot crossed buns))
2 cups whole milk
3 eggs (extra large, lightly beaten)
¾ cup sugar
¼ cup butter (unsalted, melted)
1/8 teaspoon salt
1/8 teaspoon nutmeg
½ cup cream
½ cup raisins (I used ½ cup tart cherries)
1 cup bread (cut into ½" cubes)
1 tablespoon sugar
1 tablespoon butter (melted)
¼ teaspoon cinnamon
¼ cup butter (unsalted)
1 cup powdered sugar (sifted)
1 large pinch salt
1 tablespoon brandy (or more to taste. I used 2 T)
1 egg (see notes)

Steps:

  • Preheat oven to 325F. Adjust rack to the middle of the bottom half of oven.
  • Butter an 8 x 8 baking dish. Distribute bread chunks evenly in the dish and sprinkle cherries evenly throughout the bread. Add Mix all ingredients after bread. Once completely incorporated, pour mixture over the bread & cherries.
  • Cover dish and refrigerate for 20 minutes.
  • Mix ingredients for topping and sprinkle over the top of the custard, pressing down slightly.
  • Bake at 325F for 40-50 minutes or until custard is set. The top will brown and it will only jiggle slightly in the very center.
  • Cream the butter until it is very soft. Add the sugar gradually, then the salt and beat these ingredients until they have a smooth, soft consistency. I could not get my sugar to the desired consistency, so I used the back of a wooden spoon to press the butter and sugar together until they were smooth and soft. Beat in the brandy (and egg) and chill the sauce thoroughly.
  • I used 2 tablespoons of brandy, which had a definite alcohol flavor. Every recipe I read said to chill "Hard Sauce" and serve it cold, but I found it unpleasant to eat chilled, so I warmed it up and drizzled it over the pudding. Much better.

I think this came about from her having been widowed the year before the Great Depression with 9 children to provide for. This bread pudding recipe was a way to use up stale bread, dried out raisins, and older milk or cream....

BREAD PUDDING
4-5 c stale bread, cut in cubes
3 c warm milk
1/4 tsp salt
3 eggs
1/2 c sugar
1 tsp rum, brandy, or vanilla flavoring
1/2 tsp ground nutmeg
1 Tbsp lemon juice
1/4 c raisins
1/4 c chopped nuts
HARD SAUCE
4 Tbsp butter, softened
1 1/4 c confectioners' sugar
1/8 tsp salt
1 tsp rum, brandy, or vanilla flavoring
1/4 c (or more) light cream

Steps:

  • 1. In a large bowl, soak the diced bread in the warm milk and 1/4 tsp. salt for 10-15 minutes. Preheat oven to 350°. Place a large pan of hot water on the middle rack while preheating.
  • 2. Beat together the eggs, sugar, rum or brandy, nutmeg, lemon juice, raisins, and nuts. Pour this mixture over the soaked bread and stir lightly to combine. Turn the mixture into a greased 2-3 quart casserole dish. Place the dish into the pan of hot water and bake about 45 minutes. When done, remove from the hot water and allow to cool slightly before serving.
  • 3. TO MAKE HARD SAUCE: Beat the confectioners' sugar gradually into the softened butter until blended and fluffy. Beat in the salt and the rum or brandy. Add cream 2 tablespoons at a time and blend well until very smooth. Chill while pudding is baking. Serve over the warm bread pudding.

  • 1. Heat oven to 350°F. Grease 2-quart casserole. In greased casserole, combine bread cubes and milk. In medium bowl, combine sugar, cinnamon, nutmeg, vanilla and eggs mix well. Stir in raisins and nuts. Add egg mixture to soaked bread cubes blend well.2. Bake at 350°F. for 50 to 60 minutes or until pudding is set.3. Meanwhile, in small bowl, combine all hard sauce ingredients. Beat at high speed until well blended. Cover refrigerate until serving time. 1 teaspoon ground cinnamon or nutmeg

Whipping (heavy) cream, if desired

Steps:

  • Heat oven to 350°F. In 2-quart saucepan, heat milk and butter over medium heat until butter is melted and milk is hot.

4 C. coarse bread crumbs
1/4 C. melted butter
1/2 C. sugar
2 eggs slightly beaten
1/4 t. salt
1/2 C. raisins
1 t. cinnamon or nutmeg
Brandy Hard Sauce
1/4 C. butter, softened
1 C. sifted powdered sugar
1 T. brandy (or Rum)

Steps:

  • Bread Pudding Heat milk to scalding and pour over bread crumbs. Let cool and add remaining ingredients. Pour into butter 1 1/2 quart buttered casserole. Bake at 350 degrees until a knife inserted into the pudding comes out clean. (check closer to the edge-not the center). Serve warm with or without Hard Sauce or cream. Variation: Chocolate Bread Pudding: Blend 1/3 C. cocoa to the sugar before adding it to the pudding. Brandy Hard Sauce In a small mixing bowl beat butter and powdered sugar with a hand mixer on medium speed for 3 to 5 minutes until smooth. Beat in brandy. Spoon into a serving bowl and chill to harden., about 30 minutes. Makes 2/3 C. sauce.
