OATMEAL ENERGY BALLS



Oatmeal Energy Balls image

Enjoy these Oatmeal Energy Balls for breakfast! With one batter, you can make four different types of energy balls. This recipe is quick and easy to make, and you can make it ahead of time, so breakfast is ready by the time you wake up.

1 cup old fashioned rolled oats ((jumbo rolled oats))
1/4 cup instant oats
1/2 cup ground flaxseeds ((milled flax))
1/2 cup smooth natural peanut butter ((see notes))
1/3 cup honey
1 teaspoon quality vanilla extract
1/4 teaspon salt ((if using an unsalted peanut butter))
2 tablespoons dark chocolate chips
2 tablespoons crushed banana chips
2 tablespoons finely chopped dried apple slices
1/8 teaspoon ground cinnamon
2 tablespoons unsweetened shredded coconut ((desiccated coconut, or finely crushed toasted coconut flakes also work))

Steps:

  • In a large bowl, combine everything together using a spatula. It should all come together and form a sticky but slightly crumbly batter. If the mixture is too dry, add a bit more peanut butter and honey. If the mixture is too sticky, add a bit more oats. See notes.
  • Divide the batter into 4 medium bowls. If you have a scale, each bowl should weigh 95 grams, but it's fine to just estimate. You can also make these Oatmeal Energy Balls with one mix-in. Skip this step, and make sure you adjust the mix-in recipe accordingly.
  • For each bowl, add in the mix-in of choice, and mix until everything is well combined.
  • Cover the bowl and place it in the refrigerator for about 10 minutes. This will make it easier to press into balls.
  • Press and roll the batter into roughly 1-inch balls. You should be able to make 6 Oatmeal Energy Balls with each mix-in. Enjoy immediately, and store any leftovers in a covered container in the refrigerator.

Here's an oatmeal bars recipe that's beyond easy! These healthy breakfast bars are irresistibly tasty and great for busy mornings and snacks.

1 cup creamy peanut butter (no sugar added, or sunflower butter for nut free)
1/2 cup honey (or agave syrup* for vegan)
4 cups Old Fashioned rolled oats
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon

Steps:

  • Mix together all the ingredients in a bowl until it forms a sticky dough. If the mixture is dry and not sticky, add a bit more honey and/or peanut butter; different peanut butter brands perform differently here.
  • Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
  • Freeze the bars for 15 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 16 squares or 32 rectangles. Store refrigerated for up to 2 weeks. You can eat right away, or refrigerate for about 1 hour for a more solid texture.

1 ⅓ cups rolled oats
½ cup all-purpose flour
½ cup vegan semi-sweet chocolate chips
½ cup ground unsalted cashews
2 tablespoons shelled unsalted sunflower seeds
1 tablespoon ground flax meal
1 tablespoon wheat germ
½ teaspoon ground cinnamon
¼ teaspoon sea salt
½ cup honey, warmed
⅓ cup almond butter
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x11-inch baking dish with aluminum foil.
  • Whisk oats, flour, chocolate chips, ground cashews, sunflower seeds, flax meal, wheat germ, cinnamon, and sea salt together in a large shallow bowl.
  • Stir warmed honey, almond butter, and vanilla extract together in a bowl until well-mixed. Pour honey mixture into oat mixture; stir until batter is well-combined. Turn batter out into prepared baking dish. Lay a sheet of waxed paper over batter and press firmly to evenly distribute in the baking dish. Remove and discard waxed paper.
  • Bake in the preheated oven until golden and fragrant, about 12 minutes. Pull aluminum foil from baking dish and cool bars in the aluminum foil for 10 minutes; remove and discard aluminum foil. Cut into bars.

I wanted an on-the-go oatmeal bar without the artificial ingredients of commercial bars. This is the base for the bars, a recipe easily modified to suit your own tastes.

⅓ cup packed brown sugar
1 tablespoon white sugar
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
1 cup milk
2 eggs
2 tablespoons canola oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan.
  • Combine oats, brown sugar, white sugar, baking powder, salt, and cinnamon together in a bowl. Whisk milk, eggs, canola oil, and vanilla extract together in a separate bowl. Stir egg mixture into oats mixture until well combined; set aside until flavors blend, about 20 minutes. Spread oats mixture into prepared square pan.

This was given to me by a friend, I was really surprised at how much it really helps when I feel tired. I keep mine in the freezer then pull a couple out when I need a pick-me-up and they are ready for me to eat. You can substitute almond butter for peanut butter, if desired.

Cooking spray
1/2 cup honey
1/2 cup natural creamy peanut butter
2 tablespoons maple syrup
1 tablespoon canola oil
1/4 cup light brown sugar
1/4 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 cups rolled oats
2 cups crisp brown rice cereal
1/4 cup toasted wheat germ
1/2 cup chopped roasted peanuts
1/2 cup chopped dried apricots
1/2 cup chopped dried figs
1/2 teaspoon kosher salt

Steps:

  • Spray a 9 by 13-inch baking dish with cooking spray and set aside.
  • In a small saucepan over medium heat, combine honey, peanut butter, maple syrup, canola oil, brown sugar, cinnamon. Stir and cook until mixture just begins to bubble, about 3 to 5 minutes. Remove from heat and stir in vanilla extract.
  • In a large bowl, combine oats, rice cereal, wheat germ, peanuts, apricots, figs and salt.
  • Pour peanut butter mixture over oatmeal mixture and stir gently with a spatula until well combined. Transfer to baking dish, cover with parchment paper and press firmly into dish. Allow to cool completely (will cool faster in the refrigerator). Cut into squares or bars.

2/3 cup packed brown sugar
3 cups oats
1 cup raisins
1/2 cup dried cranberries
1/2 cup chopped dried apricot
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 large egg whites, lightly beaten
1/2 cup chunky peanut butter
1/2 cup fat-free sweetened condensed milk

Steps:

  • Preheat oven to 350°F.
  • Cut butter into brown sugar with a pastry blender until crumbly.
  • Stir in oats and next 5 ingredients.
