OATMEAL BUTTER PRAWN
This dish has suddenly become very popular with Singaporean folk....sharing a recipe i have used for years.

Steps:
- Heat up oil, add prawns and deep-fry for 1 minute Dish and drain.
- Level 1/2 cup of oil wok, saute butter/margarine and egg yolks till fragrant.
- Add garlic, chicken stock granules, sugar, curry leaves, chillis, salt and peppeter and continue to fry till fragrant.
- Add prawns and fry till aromatic.
- lastly, add Nestum/oatmeal and fry till dry. Dish up and serve hot.

Steps:
- Heat 3 tbs of butter and fry prawn until cooked.
- Set aside.
- Add in another 6 tbs of butter into the remaining ones; heat it up.
- Stir in curry leaves until you can smell the lovely aroma, then add in garlic.
- Pour in egg yolks into wok at a high point slowly but consistently and with your other hand stir the yolks vigorously so it'll be like fine strings.
- When done, add in back the cooked prawn into the yolk mixture, stir it for a bit. Then ready to serve.

- Preheat oven to 180 Celsius (350 Fahrenheit). Mix together oatmeals with melted butter and brown sugar. Spread evenly on a baking sheet (I use a half-sheet pan), and bake for 10 minutes, stirring half way. Once cool enough, mix with salt and milk powder. Set aside.
- Mix together prawns with lime juice and salt. Set aside for 10 minutes. Then add in egg and corn starch, mix well.
- Heat a pot of oil for deep frying. Once the oil is hot (180 Celsius/350 Fahrenheit if you want to be specific), deep fry the prawns for 30 seconds, or just until the prawns turn pink. Drain over wire rack to remove excess oil.
- Heat butter over medium heat in a wok/frying pan until foamy. Add curry leaves and chilies, fry until the leaves look crispy.
