LOBSTER CHOWDER RECIPE
Lobster Chowder takes soup to a whole other level. This delicious chowder can make a perfect light meal, add a salad and a loaf of crusty bread and enjoy.

Steps:
- soak lobster meat in milk while preparing soup until needed.
- melt butter in a medium saucepan
- add diced celery, carrots and onion. saute for 3-4 minutes then add flour and stir it all together. Reduce heat to low and allow to cook for about 5 minutes. Do not let this burn or darken!
- Whisk in stock until fully incorporated
- remove lobster meat from milk and set aside.
- Add milk to the soup, mixing well.
- Add potatoes to soup and continue to simmer for about 30 minutes or until potatoes are softened (20-30 minutes)
- add fresh thyme
- sea salt and pepper to taste.
- add lobster and allow to simmer for 7-10 minutes to build the lobster flavor
- Serve and enjoy!

LOBSTER CHOWDER
Dick Bridges, a Maine lobsterman, gave this recipe to The Times in 2007, and we've adapted it here. It's a stew that's both humble and luxurious, making it the perfect dish to serve for a late-fall or winter dinner party.

- In a large pot over low heat, melt 2 tablespoons of the butter. Add the onion, stir, and cook until soft, about 5 minutes. Add the potatoes and 6 cups broth or water, and bring to a simmer. Season with salt and pepper. Cook for about 30 minutes, until potatoes begin to soften.
- Meanwhile, in a large skillet over medium-high heat, melt 2 tablespoons of the butter. Add about a third of the lobster and sauté for about a minute or so. Set aside. Repeat with the remaining lobster and butter.
- Add lobster to onion and potato mixture; stir over medium heat. Add canned milk and basil, taste, and adjust seasoning with additional salt and pepper. If mixture is too thick, add milk or cream. Serve.

Steps:
- Heat butter in saucepan.
- Add onion, cook 2 minutes.
- Add potatoes and season well; pour in cream and milk; season again.
- Bring to a boil and cook 10 minutes over low heat.
- Add mushrooms and continue cooking 5 minutes.
- Stir in lobster and simmer 3 to 4 minutes over low heat.
- Sprinkle with chives and paprika before serving.

LOBSTER SOUP

- In a large pot, bring the chicken broth and water to a boil.
- Chop up the lobster meat into small pieces and add it to the boiling liquid.
- Cover, turn down the heat and let simmer.
- In a skillet, heat a tbl of the olive oil and add celery, onion and garlic.
- Saute over medium heat, taking care not to brown.
- Add the tomatoes, wine and basil and saute for another 5-10 min.
- Add this to the lobster mixture and continue to simmer the soup for 30 minutes covered, over very low heat.
- In a medium saucepan, melt the butter and mix in the remaining olive oil, then the flour.
- Whisk in the milk gradually, stirring continuously.
- When it begins to thicken (just when it begins, not when it gets real thick) stir this mixture gradually into the simmering soup.
- Be sure the soup does not boil after this point but is stirred and simmered over very low heat.
- Remove half of the soup and blend it in a high-speed blender until smooth.
- Half of the soup should retain flakes of the tender lobster meat and chopped vegetables.
- Mix in the blended soup with the lobster mixture.
- Season with salt& pepper.
- Serve this soup with fresh Italian bread.

- Bring 6 quarts water to a boil in a large stockpot. Add lobsters, cover, and cook 8–10 minutes. Transfer lobsters to a rimmed baking sheet. Let sit until cool enough to handle, then separate claws and tails from bodies; return bodies to pot. Add corn cobs, sliced fennel, leek, eggplants, mushrooms, broccoli rabe, tomato paste, Old Bay seasoning, and 1 pint cherry tomatoes. Pick meat from tails and claws; set meat aside. - Using a slotted spoon, remove solids from lobster broth; discard (you want to get rid of the shells and cobs, but don’t worry about getting every last aromatic); season with salt. Add linguine and cook, stirring occasionally, until al dente, 8–10 minutes. Remove from heat and stir in corn kernels, radishes, 1 cup basil, and remaining cherry tomatoes.
- Chop reserved lobster meat into bite-size pieces; drizzle with oil just to coat. Divide linguine and broth among bowls and top with lobster meat, fennel fronds, parsley, cilantro, chiles, and more basil. Squeeze lemons over top; drizzle with oil.

- Heat butter and oil in a large, heavy-based pot over medium heat, Sweat the onions, carrots, celery and fresh herbs. Cook until soft, about 5 minutes. Season with the bouillon powder, salt and pepper/s. Stir in 4 cloves of minced garlic and cook until fragrant, about 1 minute.
- Melt butter a skillet pan over medium heat. Sauté garlic for 30 seconds, until fragrant. Add in chopped lobster meat, season with salt, pepper and cayenne to taste. Lightly sauté for 1 minute while stirring occasionally, until lobster meat is just warmed through.
- Mix 3/4 of the lobster meat into the bisque. Pour into individual serving bowls. Top each bowl with remaining lobster meat and extra tarragon.
