SWEET POTATO SOUP

Number Of Ingredients 10

1 tablespoon flour
1 tablespoon unsalted butter
1 1/2 cups chicken broth (or vegetable broth, if desired)
1 tablespoon light brown sugar
1 1/2 cups cooked sweet potatoes
1/4 teaspoon ground ginger
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 cup milk
Salt

Steps:

  • In a heavy saucepot, over medium-low heat, cook the flour and butter, stirring constantly until roux achieves a light caramel color. Add the broth and brown sugar, bring to a boil, then lower to a simmer. Stir in the sweet potatoes and spices, bring to a simmer again, and cook for 5 minutes more. In a blender, puree the soup in batches and return to saucepot. Add the milk, and reheat soup. Season with salt and pepper, ladle into warm soup bowls and serve.

I made this recipe in a recent Food Tech class and loved it. It's a very thick soup thats great for a cold winter.

Number Of Ingredients 11

1 tablespoon oil
1 large onion, diced
2 tablespoons curry powder
500 ml chicken stock
500 g sweet potatoes, peeled and cut into 1cm cubes
1 tablespoon coriander, stems chopped
1 tablespoon coriander leaves, chopped
1/4 cup coconut cream
1/4 cup unsalted peanuts
salt, to taste
pepper, to taste

Steps:

  • Heat the oil in a medium saucepan and add the diced onion. Cook until sauteed and add the curry powder.
  • Cook the onion until it has absorbed the curry powder and reduce the heat to medium/low.
  • Add the chicken stock, potatoes and corriander stems to the onion and cover with a lid for 20-30 minutes or until the potato starts to fall apart in the stock.
  • Remove from heat and add the coconut cream and peanuts. Stir until combined.
  • Use a stick blender or food processor to blend the soup until all the potato is pureed and the soup is thick.
  • If you are wanting a runnier soup, add some cream or milk to the mixture.
  • Serve immediately topped with corriander leaves and season with salt and pepper.

  • Heat the oil in a large stock pot on medium high heat. Add the diced onion and carrots and stir frequently for 6-8 minutes, or until the carrots have softened slightly.
  • Add the diced sweet potato and vegetable broth. Turn the heat to high and bring to a boil. Then reduce the heat to low, add a lid and simmer for 15-20 minutes, or until the sweet potato is fork tender.
  • Use a ladle to transfer the soup ingredients to a high-powered blender. Blend on high for one minute or until creamy. You can add more broth or water for a thinner consistency.

  • Begin by heating a large stockpot to medium/medium high heat. Once hot, coat the bottom with oil. Saute onion for 3-4 minutes, then add the jalapeno peppers. Cook for another 2 minutes, now toss in the diced sweet potato.
  • In a small bowl, stir together cumin, turmeric, cayenne pepper, and salt. Add to the veggie mixture, and saute for another few minutes.
  • Now add the pantry ingredients: canned tomatoes, coconut milk, and nut butter. Stir, then add in the water or broth. Bring the soup to a boil.
  • Reduce heat to a simmer, stir occasionally. The soup is ready after about 15 minutes, when the sweet potatoes are softened. Serve hot and garnish with nuts and cilantro!
