What a quick and easy twist on the usual Mexican fare. This recipe is perfect for a build-your-own party for teens, and I've also served it as a brunch dish-to rave reviews.-Trisha Kruse, Eagle, Idaho

1 pound ground beef
1 cup salsa
1 can (4 ounces) chopped green chilies
1 envelope taco seasoning
8 frozen waffles
Shredded cheddar cheese, shredded lettuce, chopped tomatoes, cubed avocado, salsa and sour cream, optional

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the salsa, chilies and taco seasoning. Bring to a boil. Reduce heat; simmer for 5 minutes. , Meanwhile, toast waffles according to package directions. Serve with beef mixture and the toppings of your choice.

2 pounds ground beef
2 envelopes taco seasoning
2 cans (14-1/2 ounces each) diced tomatoes, drained
1 cup water
1 cup cooked rice
1 can (4 ounces) chopped green chiles
2 packages (8-1/2 ounces each) cornbread/muffin mix
1 can (8-3/4 ounces) whole kernel corn, drained
1 cup sour cream
2 cups corn chips
2 cups shredded Mexican cheese blend or cheddar cheese, divided
1 can (2-1/4 ounces) sliced ripe olives, drained
Optional: Shredded lettuce, chopped tomatoes and chopped red onion

Steps:

  • Preheat oven to 400°. In a Dutch oven, cook beef over medium heat until no longer pink, breaking into crumbles, 8-10 minutes; drain. Stir in taco seasoning. Add tomatoes, water, rice and green chiles; heat through, stirring occasionally., Meanwhile, prepare cornbread mix according to package directions; stir in corn. Pour half of the batter into a greased 13x9-in. baking dish. Layer with half of the meat mixture, all the sour cream, half of the corn chips and 1 cup cheese. Top with remaining batter, remaining meat mixture, olives and remaining corn chips., Bake, uncovered, until cornbread is cooked through, 55-60 minutes. Sprinkle with remaining cheese; bake until melted, 3-5 minutes longer. If desired, serve with lettuce, tomatoes and red onion.

1/2 cup milk
2 Tbsp. butter, melted
1 pkg. (8.5 oz.) corn muffin mix
1 lb. lean ground beef
1 pkg. (1 oz.) TACO BELL® Taco Seasoning Mix
2 cups shredded iceberg lettuce
3/4 cup KRAFT Mexican Style Finely Shredded Four Cheese
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup TACO BELL® Thick & Chunky Salsa

Steps:

  • Whisk egg, milk and butter in medium bowl until blended. Add corn muffin mix; stir just until blended. Set aside.
  • Cook beef with taco seasoning mix as directed on package.
  • Spray electric waffle iron with cooking spray. Heat waffle iron. Pour corn muffin batter into waffle iron as directed by manufacturer; close lid quickly. Cook 4 min. or until waffle is crisp and golden. (Do not open iron until waffle is done.) When waffle is done, remove with fork. Repeat with remaining batter.
  • Top warm waffles with beef and remaining ingredients before serving.
