Norma's Moist Lemon Glazed Poppy Seed Bread image

I have made this bread for so many years and given it to friends and family for gifts. It is so moist and freezes well also. Some think it's more like a cake than a bread. Number Of Ingredients 13

2 1/4 c flour
1 1/2 tsp baking powder
1 tsp salt
1 1/4 c sugar
3/4 c milk
3 large eggs
1 c butter, melted
1 Tbsp grated lemon peel
2 Tbsp poppy seeds
lemon glaze:
3 Tbsp butter, melted
1/3 c sugar
1 1/2 Tbsp fresh squeesed lemon juice or bottled

Steps:

  • 1. Preheat your oven to 350.
  • 2. Greese bottom only of 4 (5-1/2 X 3 inch) loaf pans or one large loaf pan. Set aside.
  • 3. Sift the flour,baking powder and salt into a large mixing bowl and add all the other ingredients.
  • 4. Beat at medium speed, scraping bowl often, until mixture is well blended.
  • 5. Pour and spread batter into prepared pans.
  • 6. Bake for 30 to 40 minutes or until a toothpick inserted in center comes out clean.
  • 7. Remove from oven and set on wire rack.
  • 8. Stir together all glaze ingredients in small bowl and drizzle over warm bread loaves.
  • 9. Cool for 10 minutes and remove from pans.
  • 10. Wrap each loaf in clear wrap to keep moist. This bread does freeze well.

Number Of Ingredients 17

3 cups all-purpose flour
2-1/4 cups sugar
1-1/2 tablespoons poppy seeds
3 teaspoons baking powder
1-1/2 teaspoons salt
3 large eggs, lightly beaten
1-1/2 cups whole milk
1 cup canola oil
1-1/2 teaspoons vanilla extract
1-1/2 teaspoons almond extract
1-1/2 teaspoons butter flavoring
GLAZE:
3/4 cup sugar
1/4 cup orange juice
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 teaspoon butter flavoring

Steps:

  • In a large bowl, combine first five ingredients. Add the eggs, milk, oil and extracts. Pour into two greased 8x4-in. loaf pans. Bake at 350° for 60-65 minutes. Cool completely in pans. , In a saucepan, bring glaze ingredients to a boil. Pour over bread in pans. Cool for 5 minutes before removing from pans to wire racks to cool completely.

This recipe makes 2 loaves of delicious bread. People come to Norma's to just buy this bread. Norma's has three locations in Pensacola, FL. This bread is really good! After Nimz's review, I had to add...I usually half the poppy seed amount...I can't afford to use that many poppy seeds...however, Norma's original recipe, and the one that people line up for, has the full cup in the two loaves!

Number Of Ingredients 9

2 cups sugar
1 1/2 cups vegetable oil
4 eggs
1 (13 ounce) can evaporated milk
1 teaspoon vanilla extract
4 cups flour
1 1/2 tablespoons baking powder
1 teaspoon salt
1 cup poppy seed

Steps:

  • Combine the sugar, oil, eggs, evaporated milk and vanilla in a mixing bowl and beat until smooth.
  • Sift the flour, baking powder and salt together.
  • Add to the sugar mixture and mix well. Add the poppy seeds and mix well. Spoon into 2 greased loaf pans. Bake at 325 degrees for 50 to 60 minutes.

From the R.S.V.P. section in a January 1986 issue of Bon Appetit magazine. It was requested from The Streamside, a cafe in Shawnee-on-the-Delaware, Pennsylvania.

2 1/4 cups all-purpose flour
1 1/2 cups sugar
3/4 cup poppy seed
1 tablespoon baking powder
3 eggs
1 1/4 cups milk
3/4 cup vegetable oil
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour two 9x5-inch loaf pans.
  • Combine 2 1/4 cups flour, sugar, poppy seeds and baking powder in bowl.
  • Beat eggs to blend in another bowl; beat in milk,oil and vanilla.
  • Add dry ingredients and stir until smooth; pour into prepared pans.
  • Bake until tester inserted comes out clean, 50 to 60 minutes.
  • Serve warm or at room temperature.

3 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
13 ounces evaporated milk
6 teaspoons poppy seeds

Steps:

  • In a mixer bowl, beat eggs; add sugar and oil.
  • Beat well.
  • In a separate bowl, sift together flour, baking soda and salt.
  • Add flour mixture to egg mixture alternately with evaporated milk.
  • Mix in poppy seeds.
  • Pour batter into a greased angel food cake pan.
  • Bake at 325 degrees for 1 1/2 hours.
