SHRIMP RAMEN

Shrimp joins bacon and mushrooms in a chicken broth for this simple ramen.

8 ounces bacon, chopped
5 garlic cloves, thinly sliced
2 cups sliced stemmed shiitake mushrooms (about 6 ounces)
7 cups low-sodium chicken broth
1 teaspoon soy sauce
1 teaspoon Worcestershire sauce
Two 3-ounce packages ramen noodles (flavor packets discarded)
12 ounces peeled medium shrimp, halved lengthwise (about 20 shrimp)
2 tablespoons 1-inch-long pieces fresh chives

Steps:

  • Put the bacon in a cold medium saucepan and cook over medium-high heat, stirring occasionally, until golden, about 6 minutes. Pour off all but 3 tablespoons of the bacon fat from the saucepan. Add the garlic and cook, stirring, until golden, about 3 minutes. Add the shiitakes and cook, stirring, until browned, about 6 minutes.
  • Pour in the chicken broth, soy sauce, and Worcestershire and bring to a boil. Add the ramen and boil until tender, about 2 minutes.
  • Remove the broth from the heat and stir in the shrimp. Let stand until the shrimp are cooked, 1 to 2 minutes. Serve topped with the chives.

1 package (3 ounces) Oriental ramen noodles
1 cup cooked small shrimp, peeled and deveined
1/2 cup chopped green onions
1 medium carrot, julienned
2 tablespoons soy sauce

Steps:

  • In a large saucepan, bring water to a boil. Set aside seasoning packet from noodles. Add the noodles to boiling water; cook and stir for 3 minutes. , Add the shrimp, onions, carrot, soy sauce and contents of seasoning packet. Cook until heated through, 3-4 minutes longer.

1 pkg. (3 oz.) ramen noodle soup mix, any flavor
1/4 cup KRAFT Asian Toasted Sesame Dressing
1 cup fat-free reduced-sodium vegetable broth
6 oz. frozen uncooked cleaned medium shrimp, thawed
1 cup broccoli florets
1/2 cup coarsely chopped red peppers
2 Tbsp. PLANTERS Dry Roasted Peanuts, coarsely chopped

Steps:

  • Heat oven to 350°F.
  • Break block of Noodles in half. Place each half on separate large sheet of heavy-duty foil sprayed with cooking spray. (Discard Seasoning Packet or reserve for another use.) Bring up all sides of each foil sheet, leaving opening at top; place on rimmed baking sheet.
  • Mix dressing and broth until blended; pour over noodles. Top with shrimp and vegetables. Fold ends of foil together to seal top of each packet, leaving room for heat circulation inside.
  • Bake 22 to 26 min. or until noodles are tender and shrimp turn pink. Cut slits in foil to release steam before carefully opening packets. Stir ingredients in packets until blended; sprinkle with nuts.

Alton Brown's recipe for ramen noodles, shrimp, and veggies cooked in a neat little pouch. If you don't have time to devein shrimp, just buy them pre-shelled and deveined. Mirin is a sweet rice-wine used in Japanese cooking. It is similar to sake , but with a lower alcohol content and a high sugar content. Substitutes: I suppose sugar or corn syrup mixed with vinegar (preferably rice vinegar) or sake or sherry. Look up Weber's "Substitute Japanese Hon-Mirin" here on recipezaar!
