CRISPY TOFU BROCCOLI STIR FRY
This crispy tofu broccoli stir fry is fast and easy, and I'm showing you how its possible to make crispy tofu at home without deep frying it. This vegetarian recipe makes just enough sauce to coat the tofu and broccoli so that they don't get soggy and still retain a crunch. Isn't that the real pleasure of eating a good stir fry?

Steps:
- Dab the tofu with a kitchen towel or paper towel to get rid of any extra moisture. Cut into 1/2 inch cubes and toss them in a mixture of cornflour, salt and pepper.
- Whisk together all the ingredients for the sauce and set aside.
- Heat oil in a non stick pan and spread the tofu pieces out so that they are evenly layered on the pan. Cook each side till its a light golden brown and remove from the pan. Don't worry if the tofu pieces stick to each other a bit. You can easily pull them apart once they are cooked and crispy.
- Heat oil in the same pan and once its hot, add garlic and ginger. Saute for a minute and add the broccoli florets. Cook them for a minute and pour the sauce into the pan. Stir fry for a minute or two on high heat to let the sauce thicken and then add the tofu. Quickly toss everything together and turn off the flame. Top with sesame seeds and green onions and serve.

- Drain the tofu blocks and place between a dish towel. Place something heavy on it for a few minutes to drain out excess moisture.
- Next, start cooking the tofu. I used an air fryer, and misted the tofu chunks with olive oil spray. Also, mist the bottom of the air fryer basket before adding the tofu. This is my favorite way to make tofu as it is SUPER crispy, just check/shake every 5 - 10 minutes, and set to the highest heat, until crispy on all sides. It should take between 20 - 30 minutes. (see notes at the bottom for alternate ways to cook the tofu if you do not have an air fryer).
- While the tofu is cooking, mince the garlic and ginger. Chop up the green onions and fresh broccoli florets

- Remove the tofu from its packaging and wrap in paper towels. For best texture and flavor results, you’ll want to remove as much excess water as possible. To do this, place the wrapped tofu between two plates and lay a can or book on top to create a gentle weight. Leave this setup in place for at least 30 minutes, up to 2 hours. Once the tofu is finished pressing, slice into approximately 1 1/2-inch cubes.
- In a small bowl, whisk together the soy sauce, tahini, sambal, rice wine vinegar, and Sriracha until smooth. Taste and adjust ingredients if desired (this sauce is very amenable to tweaking; try adding a bit more sambal or Sriracha for heat, or more tahini for creaminess).
- Being a large pot of salted water to a rolling boil, then cook the noodles according to package instructions. Drain and transfer to a large serving bowl.
- While the noodles are cooking, heat a large skillet over medium heat, then add the grapeseed and sesame oil. Pan fry the tofu until golden brown and crispy on as many sides as you have patience for (aim for 2 sides minimum). This should take around 7-10 minutes. Once the tofu has finished cooking, transfer to the bowl with the noodles.
