NONNO'S PIZZA

Steps:
- Combine the tomato puree, basil, kosher salt and 2 tablespoons of the olive oil in a small bowl. Allow to sit for 1 hour to let the flavors marry. Remove the pizza dough from the refrigerator and bring to room temperature for an hour as well.
- Preheat the oven to 400 degrees F.
- Drizzle the remaining 2 tablespoons olive oil on a 9-by-13-inch rimmed baking sheet. Stretch the dough in the oil, flipping it back and forth and stretching it to fit the baking sheet. Use your fingers to make a few dimples in the dough. Spread the sauce evenly over the top all the way to the edges. Bake until bubbly and golden brown, 20 to 25 minutes.
- Allow to cool for 5 minutes on the baking sheet, then remove to a wire rack to cool completely. Drizzle with 1 tablespoon olive oil and sprinkle with the ricotta salata, oregano and flake salt. Cut into squares and serve warm or at room temperature.

- In large mixing bowl combine yeast and sugar and warm water. Let sit for 3 minutes then add olive oil and flour and mix to form dough. Cover lightly with towel and set aside.
- Thin chop vegetables and grate cheeses. Remove dough from bowl and shape on baking stone or pizza pan into 12-14 inch circle. Stretch dough thin for a crisper crust.
- Top dough circle with marinara sauce/veggies and meat then top this with cheeses. Can sprinkle a dash of garic/basil or oregano on top for extra flavor. Bake for 15-20 minutes at 350 degrees. Crust will rise and cheese will bubble and turn golden. Enjoy!

- Bring chicken broth (or water with chicken bouillon) and leftover meat sauce to a boil in a large pot, over high heat. Add orzo pasta and stir frequently so it doesn't stick at the bottom.
- When the soup comes to a boil, reduce heat to medium and simmer till the orzo is cooked, about 12-13 minutes or according to package instructions.
- Remove pot from heat, stir in butter and cheese, and serve immediately. Top with extra cheese, if desired.
- MAKES 6-8 SERVINGS.

A simple recipe for a delicious treat to serve with coffee. Nonna Rosa is my grandchildren's moniker for me. "Grandma Rose"...they like softer chewier version!

Steps:
- 1. Pre-heat oven to 375 degrees Butter and dust baking sheet with flour to prevent sticking.
- 2. Cream together butter and sugar(if butter is used) and add to eggs. Beat well. Mix in vanilla. Add flour/salt/baking powder and nuts and mix well. Shape into two small loaves and bake for 30 minutes or until tops are golden. Remove from oven.
- 3. Let loaves cool slightly and slice on diagonal 1 inch slices. Return the slices to baking pan and place in oven again...lower oven temp. to 250 degrees. Bake for additional 15 minutes turning slices once while cooking. Cool on racks. Dip top edges in melted chocolate and let dry. These will keep in parchment or an airtight container for several days :) Enjoy!
