NO-KNEAD GARLIC-CHEESE FLATBREAD
Got this online from King Arthur Flour and described as: Stir up the batter for this easy yeast bread, scoop it into a 9" x 13" pan, and bake up a moist, golden flatbread, studded with melting cheese and chopped garlic. Serve it fresh; or let it rest overnight, then cut into strips and crisp in the oven, to make delightfully crunchy appetizer bread sticks. Prep time does not include rising

Steps:
- Lightly grease a 9" x 13" pan, and drizzle 1 to 2 tablespoons olive oil in the bottom.
- Combine all of the ingredients except the cheese and garlic, and beat at high speed with an electric mixer for 60 seconds.
- Add the cheese and garlic, beating gently just to combine.
- Scoop the sticky batter into the prepared pan, cover the pan, and let it rise at room temperature for 60 minutes, till it's become puffy.
- While the dough is rising, preheat the oven to 375°F
- Sprinkle the dough with pizza seasoning, and/or the dried herbs of your choice, if desired.
- Bake the bread till it's golden brown, 35 to 40 minutes.
- Remove it from the oven, wait 5 minutes, then turn it out of the pan onto a rack. Serve warm or at room temperature.
- To make crunchy bread sticks: Cut day-old bread into 1/2" slices. Lay the slices on an ungreased baking sheet, and bake them in a preheated 350°F to 400°F oven till they're a light golden brown and crunchy, 15 to 25 minutes or so; keep your eye on them, as they brown quickly towards the end.

If a recipe using instant yeast calls for the dough to "double in size, about 1 hour," you may want to mentally add 15 to 20 minutes to this time if you're using active dry yeast.

Steps:
- In a cup or small bowl, sprinkle yeast over the surface of the lukewarm water. Let stand for 5 to 10 minutes to dissolve.
- In a large bowl, stir together the flour, salt and sugar. Pour in the yeast mixture along with the olive oil. Beat with a sturdy spoon until dough is stiff enough to pull away from the sides of the bowl. Cover, and set aside until doubled in size, about 35 minutes.
- Remove the dough from the bowl and knead briefly on a floured surface. Roll the dough out to 1/4 to 1/2 inch thickness or to the size of your baking sheet. Place on a greased baking sheet and spread butter over the top. Sprinkle with garlic powder, Parmesan cheese and mozzarella cheese. Let rest while you preheat the oven to 350 degrees F (175 degrees C).
- Bake for 20 minutes in the preheated oven, until golden brown and cheese is bubbly. Serve warm.

- Cut each baguette into sideway slices but don't cut all the way through.
- Mix all the ingedients exept for the cheddar to make a herb butter.
- Spread the butter between the slices and poke in some cheddar.
- Wrap the bread in foil.
- These can be frozen for future use or baked at 200C for 12-15 minutes or placed on the bbq to toast, turning on each side.

- In a mixing bowl, stir together the flour, yeast, salt and garlic powder. Then stir in the grated cheese.
- Add the water and use a wooden spoon or silicone spatula (recommended) to bring the dough together. It will seem a little dry and shaggy looking at first, but it will turn into a soft and sticky mass in just a couple of minutes.
- Shape the dough into a ball (doesn't have to be perfect) and let it remain in the bowl. Cover with clingfilm and let it rest at room temperature for 2 hours, or until doubled.
- Place the bowl, still covered, in the fridge overnight and up to 3 days. I usually let it chill for about 14 to 16 hours.
