1 cup cooked drained pinto beans
1/4-1/2 cup milk
6 ounces unsweetened chocolate
6 tablespoons butter
1 tablespoon vanilla
2 lbs confectioners' sugar
nuts (optional)
raisins (optional)

Steps:

  • Mash 1 cup cooked and drained pinto beans. Add milk. Melt unsweetened chocolate with butter. Add chocolate and butter mixture and vanilla to bean and milk mixture. Stir until slightly thickened.
  • Work 2 pounds of powdered sugar into above mixture, you may have to work with your hands. Spread in a buttered pan and refrigerate. May add nuts and raisins. Makes about 3 1/2 pounds.

Can you think of a better way to eat your beans then as dessert? Another plus is not having to turn on that oven in the summer! When I had tried a tea cake with beans and loved it, I went looking for more things with beans that are desserts. Found this on the internet. This is not a diet dessert...so eat sparingly.

1 cup pinto beans, cooked
3/4 cup cocoa powder
1/2 cup margarine, melted (Better Butter#117086)
1 tablespoon vanilla
2 lbs powdered sugar
1 lb sugar substitute (or equivalent amount)
4 ounces walnuts, chopped

Steps:

  • Mash beans.
  • Mix well together all ingredients.
  • Butter a 9x13 inch pan and spread mixture.
  • Put in refrigerator and chill thoroughly.
  • Cut into squares.
  • * Make sure to read sugar subsitute package to get correct measurement to equal 1 lbs of regular sugar.

1 (16 ounce) box confectioners' sugar
1 cup peanut butter
4 tablespoons hershey's cocoa
1 teaspoon vanilla
1/2 lb butter

Steps:

  • Melt butter, let cool. Mix peanut butter, vanilla and butter by hand. Add cocoa, add 10x sugar, mix well by hand. Place in a square pan. In 15 minutes its ready! Cut into squares and enjoy~.

My neighbor gave me this recipe. She found it on a Dole website. Haven't tried it yet but it sounds tasty!

1 large ripe banana
2/3 cup butter or 2/3 cup margarine
2 teaspoons vanilla extract
2 1/2 cups rolled oats
1/2 cup packed brown sugar
1 cup semi-sweet chocolate chips
1/2 cup peanut butter

Steps:

  • Finely chopped banana (1-1/4 cups).
  • Melt butter in large skillet over medium heat; stir in vanilla.
  • Add oats and brown sugar.
  • Heat and stir 5 minutes.
  • Set aside 3/4 cup oat mixture.
  • Press remaining oat mixture into greased 9-inch square baking pan.
  • Sprinkle banana over crust.
  • Melt chocolate chips and peanut butter together over low heat.
  • Pour and spread over banana.
  • Sprinkle with reserved oat mixture; press down lightly.
  • Chill 2 hours before cutting.
  • Store in refrigerator.

This is a delicious protein packed, yet low fat candy recipe. You have to taste it to believe it. And its fun to ask people to guess the secret ingredient.

1 c cooked pinto beans, unseasoned
3/4 c cocoa
1/2 c melted butter
1 Tbsp vanilla (yes 1 tablespoon)
2 lb powdered sugar
1 pinch salt (do not add if beans have any salt in them)
1/2 c chopped pecans

Steps:

  • 1. Mash the beans. Mix them with the margarine, cocoa and vanilla. Stir in the sugar and pecans.
  • 2. Butter a 9 by 13 inch pan and spread the bean mixture in this. Put into the refrigerator and chill thoroughly. Cut into squares, serve.
