NO-BAKE PEANUT BUTTER COOKIES III
These cookies were always served for school lunch. I got the recipe after marrying from one of the cooks, and have made it many times since. This cookie generally is seen with cocoa, but I like this one better, it doesn't have any.

Steps:
- In a saucepan over medium heat, combine sugar, butter and milk. Bring to a rapid boil and boil for one full minute. Remove from heat and stir in the vanilla and peanut butter. Mix in the oats, stirring until the mixture begins to cool. Transfer to a large bowl if it does not fit into the pan well. Drop batter by teaspoonfuls onto waxed paper. Let cool until set.

NO-BAKE PEANUT BUTTER COOKIES
Steps:
- Gather the ingredients.
- Line 2 large baking sheets with parchment paper.
- Combine the cubed butter, granulated sugar, brown sugar, and milk in a small saucepan and heat on medium-high heat. Stir with a wooden spoon until the butter has melted.
- Stop stirring and let the mixture come to a rolling boil. This means active bubbles around the edges and in the center of the pot. Once it comes to a complete rolling boil, set a timer for 60 seconds.
- Stir with the wooden spoon once or twice to prevent burning. Once the timer goes off, immediately remove the saucepan from the heat.
- The mixture will be very hot, so carefully stir in the peanut butter, vanilla extract, and salt until the peanut butter has melted and is incorporated into the butter mixture.
- Fold in the oats until they are completely coated with the peanut butter mixture.
- Using a cookie scoop, drop scoops of the batter onto the prepared baking sheets.
- Flatten the top of each cookie slightly with the back of the scoop. Allow the cookies to cool on the counter for about 30 minutes, or until firm and set up. Enjoy.

Posted in response to a request, I got this recipe from a lady at church who make them for Bible School in the 1980s. I had made chocolate no-bake cookies for YEARS but had never heard of peanut butter no bake cookies. So delicious that my choco-holic daughter likes them better than the chocolate variety! No. of servings depends on how big you make the cookies. Prep time depends on how fast you are scooping the cookies onto the wax paper covered newspaper! (You get better w/ practice! :D )

- Before getting started, make sure to gather all of your ingredients and measure everything out. Line a couple of large baking sheets with parchment paper (I like to just line my countertop with a large sheet of parchment paper, if your countertop is heat resistant you can also do this instead) and set aside.
- Place the butter, sugar, and milk in a saucepan and heat over medium heat, making sure to stir often until the butter is melted and everything is well combined. Bring the mixture to a rolling boil (the top should be completely covered in bubbles and bubbling vigorously) and allow to boil for 60 seconds (make sure to set a timer!) without stirring.
- Remove from the heat, and stir in the peanut butter and vanilla extract until fully combined. Stir in the oats and mix until all of the oats are coated with the mixture and everything is well combined.
- Drop spoonfuls of the mixture onto the prepared baking sheets. I like to use a 1.5 tablespoon cookie scoop and flatten the cookies out a little. Allow to cool for about 45 minutes- 1 hour or until the cookies have firmed up, serve, and enjoy! The cookies will continue to firm up more the longer they cool.
