PATTY'S MASHED TURNIPS

The smell of hot buttery turnips always reminds me of the holiday season when my grandmother prepared this dish for the family. Originally submitted to ThanksgivingRecipe.com.

7 large turnips
1 cup milk
2 tablespoons butter
salt to taste
ground black pepper to taste

Steps:

  • Peel, wash, and quarter turnips.
  • Boil 35-45 minutes or until tender. Strain and rinse cooked turnips.
  • Place in large mixing bowl and use fork to break up turnips into smaller bits. Add milk and butter. Blend to desired consistency. Add salt and pepper to taste.

1 lb turnip
1/2 teaspoon salt
2 tablespoons butter
2 tablespoons half-and-half
1/4 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • peel turnips with a peeler & cut them into 1/2-inch cubes.
  • fill a medium-size pot with water & bring to a boil.
  • add 1/2 teaspoon salt & turnip cubes & bring to a boil again.
  • turn the heat low,cover the pot and simmer for 20 minutes or until the turnips are soft.
  • drain the turnips into a colander in the sink.
  • put the turnips back into the pot & warm on low heat for a minute ito dry off moisture.
  • add butter,half-and-half & rest of the salt & pepper.
  • stir with a spoon while the butter is melting.
  • mash with a potato masher until soft & fluffy.

First, you need to know what is a turnip. It is dark yellow and dark purple waxy vegetable. A rutabaga is a white and bright purple thing. Second this is a classic. I like to taste my food for what it is. I don't want to taste 20 other things.

1 -2 tablespoon sugar
1 -2 tablespoon gravy, made from home stock of the meat you are eating with these turnip

Steps:

  • Peel and cut turnip like you would for mashed potatoes.
  • Put in pot of water until covered and your sugar. Turnips can be very bitter so the sugar takes the bitter out. Cook until fork tender. Drain. Mash like you would potatoes. Use gravy instead of milk or whatever you mash your taters with. Enjoy!

Mashed potatoes are one of my favorite foods, but it's fun and healthy to sub in different root veggies from time to time. This is one of my favorite combinations so far. The tartness of the turnips is nicely balanced by the sweetness of the parsnips. I enjoy these with Recipe #248055, Recipe #401093, or Recipe #361996.

2 large turnips
4 large parsnips
1/4 cup vegan margarine (Earth Balance Buttery Spread)
1/4 cup plain soymilk (more or less as needed)
2 tablespoons vegan mayonnaise (Vegenaise...optional, but recommended for super creaminess)
salt and pepper

Steps:

  • Bring a large pot of water to a boil. Meanwhile wash your veggies and chop them into large cubes.
  • Add the veggies to the boiling water and cook for about 20 minutes. When they are tender, drain them, return them to the pot, and mash them with whatever mashing utensil you have on hand.
  • Stir in the remaining ingredients, taste, and adjust the seasonings as needed.

Mashed turnips were as necessary in a farmer's feast as mashed potatoes. They're also extremely easy to make. Be sure you get purple topped turnips and not rutabagas. This recipe came from "The Little House Cookbook" by Barbara M Walker, and the food featured in "On The Banks of Plum Creek."

2 1/2-3 lbs turnips, without tops
3 tablespoons butter
salt and pepper

Steps:

  • Wash turnips and peel them.
  • Slice thin across the grain to break vertical fibers.
  • Place in a kettle of water - 1/4 to 1/2 cups should do - and simmer, covered, until tender. This will take about 20 and 30 minutes.
  • Remove cover for last few minutes to cook away excess water.
  • Add butter and sprinklings of salt and pepper, and mash turnips.
  • Return to burner to heat through, then remove to a warm serving dish.
